What’s a weekend without baking in our house?! These gluten free snickerdoodle pancakes are simple, minimal ingredients, and yummy (especially for being a healthier option to pancakes!)
Ingredients:
- 1 1/2 cups gluten free baking flour
- 2 tablespoons ground chia seeds
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 4 tablespoons coconut oil
- 1/4 cup coconut sugar or maple syrup
- 1/2 teaspoon baking powder
- 1/3 teaspoon baking soda
- 3/4 cup coconut milk
- Optional: top with yogurt, fruit, syrup, or sprinkles (because what isn’t better with sprinkles?!)
Directions:
- Add all dry ingredients to a bowl and mix
- Add wet ingredients and blend into batter
- Heat a medium-sized pan to medium
- Spray pan with coconut oil
- Spoon batter onto pan (I make three small “piles”)
- Flip after a few minutes, then continue flipping until lightly browned
- Enjoy!
