Healthy Crockpot Kung Pow Chicken

It’s the last week having my sister visit, and I’m so going to miss her in the kitchen with me 😦 This week we wanted to create a clean Kung Pow chicken recipe that was crockpot friendly and we did just that! Introducing Sar to all the clean cooking alternatives I use in my kitchen has been so much fun! We bounce ideas off of each other like those silly paddles with a ball attached by a string….so, with that, enjoy this yummy crockpot chicken recipe with a kick! Because crockpots trump takeout any day!

Serves 4

 

INGREDIENTS:

  • 4 organic chicken breasts
  • 1 organic red bell pepper, diced
  • 1 organic green bell pepper, diced
  • 1/4 cup onion, diced
  • 4-5 organic zucchini, spiraled (I LOVE my Paderno spiralizer I bought off Amazon) to make “zoodles”; if your zoodles are never ending, cut at about 6-8″ so you can eat them easier
  • 4 tablespoons unsalted, unskinned, shelled peanuts
  • About 6 scallions or chives, sliced (I used chives because my garden has them)
  • 1 small can of sliced water chestnuts, drained and rinsed (dry these out on a paper towel while you prep sauce)
  • 1 small can of bamboo shoots, drained and rinsed

 

Sauce Ingredients:

  • 3 tablespoons Bragg’s Liquid Aminos “Soy” Sauce
  • 2 1/2 tablespoons Bragg’s organic apple cider vinegar or organic balsamic vinegar
  • 4 tablespoons water
  • 1 shake of Chinese 5-Spice Powder
  • 3/4 tablespoons organic tomato paste
  • 4 teaspoons coconut sugar, organic, raw honey, or 100% pure maple syrup
  • 3 tablespoons arrowroot
  • 1/4 teaspoon red chili pepper flakes or 1/4 dried chili pepper, diced (use more or less depending on how much heat you can take)
  • 2 teaspoons avocado oil
  • 2 teaspoons sesame oil
  • 2 teaspoons ground ginger
  • 4 garlic cloves, minced

 

DIRECTIONS:

  1. In a small mixing bowl, whisk together all sauce ingredients [aminos, vinegar, water, tomato paste, sugar/honey/syrup, arrowroot, Chinese 5-spice, oils, ginger, garlic & red pepper flakes].
  2. In a small sauce pan, add sauce mixture and bring to a boil; reduce heat and simmer until thickened and bubbling, about 1-2 minutes. Set aside. (You can also just place all sauce ingredients into crockpot once they’re mixed together, simmering just ensures proper thickness occurs).
  3. Turn crockpot on low and place chicken breasts in
  4. Add diced bell pepper & onion
  5. Add bamboo shoots and water chestnuts
  6. Pour sauce mixture on top of chicken & veggies (sneak in more veggies if desired; broccoli & carrots are delish with this sauce too! You may just need to double up on the recipe depending on how many extra you add).
  7. Cook on low for 7-8 hours, or until chicken is fully cooked through, or high for 4-5 hours, until chicken is fully cooked through.
  8. About 10 minutes before you’re ready to serve, add zoodles on top of chicken to steam and get al dente.
  9. Remove zoodles and place in four bowls.
  10. Add chicken on top of zoodles, sprinkling peanuts and scallions on top of each serving
  11. Grab some chopsticks and enjoy this healthy, clean, take out alternative!

 

*Serve with steamed Edamame and Bragg’s Liquid Aminos as a dipping sauce as a yummy appetizer! Or cook up a batch of cauliflower fried rice to serve as an additional clean, healthy side!

Here’s the skinny on the adjective SKINNY….and this actually isn’t to anyone in particular, more of a memo to all womenkind out there in our crazy beautiful universe, because after the 239487th time of hearing the term “sooo skinny” used among conversation, I needed to go on a mini vent sesh…

 

Dear Skinny,

 

I see a 27 year old who’s sunken-in eyes are from pulling an all-nighter comforting a teething 14-month old, not from malnutrition. I see tiny, yet strong arms, who are all muscle from picking up a 25-pound barnacle all day long, every day. I hear “don’t you eat?!” while, in fact, I LOVE cooking AND eating & showcasing that here on my blog. Food, I love you & appreciate you! I see a height of 5’5″ & a weight that matches that frame. I see womanly curves, strong arms & legs. I see shoulder muscles I never even knew existed until the last few months from TIU, bootcamp, and Tanner. I see the body I’ve always known, but leaner. Stronger. More fit. I see an athlete. I see legs that carry me to reach new mile victories, one step, one day at a time. Behind the “oh my gosh you’re too tiny!” Implying I need a cheeseburger, lies a rock-hard stomach full of abs because I care about what goes into my body. I see your cheeseburger and raise you my turkey burger. Hold your fries, I’ll have my sweet potato. Oh wait, I have cheat meals too, but as a once-and-a-while treat. Not because I’m on a “diet”, because I don’t want to clog my arteries full of junk on a regular basis.

 

I see a body that TIU has given me – I see a body I have worked for – a body that I am proud of. I see a body that is FIT. Healthy. So, SKINNY….I see you and your definition – “very thin or too thin” & people who compare you to me…..I’m not you.

 

I may not be able to lift heavy weights, but I am strong. I don’t want to be a size zero. I don’t want to be a body builder. I just want to be ME. The best version of myself I can be, on a journey without judgement, criticism, or the notion that we’re supposed to look a certain way.

 

The next time you judge someone’s body – stop. You don’t know their journey – their goals – their plan. We’re ALL beautiful, and that comes from within. Thin – Thick – we’re women & we should EMPOWER one another, not judge. Imagine if using “skinny” derogatorily was used the other way around?

 

You need a cheeseburger. You need to put down the cheeseburgers. You look too thin. You look too fat. Do you eat? Clearly you eat too much...see what I mean?

 

Don’t try to tear other people down because they don’t fit your definition of beauty – of skinny – of strong – of overweight – of womanhood. 💗💗💗

Fall Makeup Favs

Yesterday my sister & I went on a mini makeover shopping adventure, because a few months ago I packed up most my pregnancy and postpartum clothes..AHH! Felt UH-mazing. Now that the last few pounds have finally been shed, it was time to do another closet revamp, and I was left with almost nothing fall-ish that fit anymore. A couple pairs of old jeans from college and leggings were pretty much it. Half of my closest is literally tank tops, because any breastfeeding mama knows you need a zillion to survive. I’ve jumped around a bit since I graduated college so my wardrobe has become an eclectic grab-bag assortment from ever-changing climates. Upon graduating college, I moved from Chico, California to Park City, Utah. After a year of snow-bunny living I moved to Pacific Beach, San Diego, then South Florida, and now back to San Diego, where I’ve never been happier!

Fall is my favorite.

I haven’t needed anything for fall/winter weather in ages, because we lived in Florida the last four and a half years. Fall has always been my absolute FAVORITE season, and what I always missed most living in the tropics, where there is one season all year long – summer. I am over the moon ecstatic to be able to wear sweaters and boots while sipping on warm teas and lattes…ahhh I want to build a fire just thinking about it, even though it’s in the low 60s as a write this 😉

When I was getting dressed today I couldn’t wait to test out the new makeup I got yesterday from MAC – a bold lip color and a new blush. I absolutely despise buying new blush because I have the world’s most sensitive skin ever and new kinds always make me break out in little weird white bumps all over my cheeks. But my old blush was MAC, so what a perfect excuse to shop there again! There is nothing better than a good shopping spree to make you feel refreshed, trendy, and cute! With a few new outfits and two new makeup staples, hellooooo fall!

As I was applying my lipstick and blush this morning, I was excited to create a blog post about my makeup favs to share, because I am a stickler on products and their quality and what they do to my skin. In the future I do hope to green-up my makeup, however, because most these products are rated a 7/10 on the Think Dirty app (an app that educates consumers on the cosmetics industry’s products and their ingredients; view how it works here)….YIKES. Being green and healthy is really important to me, so I would like to swap the “dirty” rated products to cleaner options soon. But, until then, this dark-circled-sleepy-headed-mama relies on her trusty favorites listed below (in the order in which I apply them!):

PRIMER:

  • Tarte’s “Clean Slate Flawless 12-Hour Brightening Primer
  • How I use this: Put a pea-sized amount on my palms and apply directly to face with fingers. Put on after you apply your daily face moisturizer.
  • Why I love this: Originally I bought in to the Tarte saleswoman’s up-sell gimmick, but turns out it wasn’t a gimmick at all, and I LOVE this primer. I had tried a couple others previously and they were heavy, stunk, made me breakout, and didn’t impact the wear of my makeup. This primer is light, smells so fresh and clean, and makes your makeup last all day…seriously! It keeps your face from getting gross and shiny and protects your skin from applying the foundation directly to your face. Doesn’t make me break out and doesn’t clog my pores!
  • Price: $30

FOUNDATION:

  • Tart’s “Amazonian Clay Full Coverage Foundation with SPF 15
  • How I use this: After primer, I streak a few lines directly from the bottle on my forehead, my cheeks, and my chin. Then I use my Tarte foundation brush to blend evenly all over my face.
  • Why I love this: It is the PERFECT shade for my face. You know how long it took me to find that?! It’s the exactly mix of yellow and pink hues for my skin tone. But that’s not even my favorite part!! When we were living in Florida I was finding my old foundation was leaving my face really shiny because of the humidity. By the time I finished my half hour commute to work, my face was gross and slimy! Que. the angelic music – this foundation has powder BUILT.IN. So as soon as it dries, it leaves a matte powder finish! Even with oily skin this foundation last ALL DAY LONG. Seriously….as a busy mom who never has time to re-apply makeup if going from a workout to lunch or dinner, this baby is my miracle worker!

CONCEALER:

  • Tarte’s “Maracuja Creaseless Concealer”
  • How I use this: Dab a pen-tip sized dot under each eye (seriously, a little goes a really long way!) Use finger to dab and spread a light layer evenly under each eye, covering dark circles! If they’re super dark, add another layer after first layer sets.
  • Why I love this: It WORKS! Makes my eyes look bright andr refreshed, even when Tanner was a newborn and I was a walking mombie (mom-zombie). It’s light, airy, and this tiny bottle lasts forever because a little dab goes such a long way!! Only con….I don’t find this to truly be “creaseless”. However, the pros absolutely outweigh that con, and it’s creaseless as long as I put eyeshadow over it. Like I mentioned earlier, even if I’m going for a natural, day time “mom” or gym look, I just use a quick layer of skin-toned shadow overtop.

MAKEUP BRUSH:

  • Tarte’s “The Buffer Airbrush Bamboo Foundation Brush”
  • How I use this: To evenly coat my face with my Tarte foundation. I blend all the streaks I paint on to my face evenly all over. Blend under your jawline as well to match your neck. No cakey Umpa Lumpa faces allowed!
  • Why I love this: It’s the BEST size! Fluffy, not to small but not too large. It’s super soft on your skin, and doesn’t absorb all your makeup before it gets on your face. Don’t you hate that?! I had some other brushes that would suck up all my foundation, and I’d literally have to use like three coats because the brush ate it all!
  • Price: $32

EYESHADOW:

  • Urban Decay’s Naked Basics Pallet
  • How I use them: On busy days I only use the second and third colors (light yellow and light pink) on my eyelids and dab a little of the first shade (white) in the corner of my eye (corner closest to my nose). If I’m going for a nighttime look, I’ll use the same colors as a base, then shade the corners with the light tan, then brown, and use the black as a liner for a cat eye. I wet my liner shadow brush, then use the black for an eyeliner; it doesn’t flake and looks amazing! You can do double or triple coats of the black for a bold look that lasts all night. Sometimes I’ll mix the two shades of brown and use them to fill in my eyebrows, too. So this tiny little pallet is truly so versatile!
  • Why I love this: This case is tiny! Approx. 1 1/2″ x 3″, so it’s perfect for everyday use AND for traveling! You get all the basic colors that look great with any outfit, for any occasion, without having to lug around their larger pallets for basic use or when packing for a trip and trying to minimize luggage. Also sometimes the Tarte under eye cream leaves creases if no shadow goes on top of it, so I love the mix of yellow+pink because it matches my skin tone and looks like nothing, so is perfect when I go for the au-natural look with no other shadow/liner. Also a perfect stocking stuffer gift!

BLUSH:

  • MAC Powder Blush in Melba
  • How I use this: Apply to cheeks with a blush brush after my foundation has set
  • Why I love this: It’s the PERFECT shade of peach, and doesn’t have glimmer so looks great for day or night; it’s natural, pretty, and leaves your cheeks with a sun kissed glow. I’ve been searching for a fun peach shade forever now, and this one is IT!
  • Price: $22

MASCARA:

  • Maybeline’s Lash Stiletto, Very Black
  • How I use this: Apply about 3-4 strokes on bottom and top of lashes after applying eye shadow & liner
  • Why I love this: It’s from Target, so it’s inexpensive and I don’t have to order online or go to the mall/speciality beauty store to buy it! I’m super picky when it comes to mascara because I think lashes that look like furry tarantulas are just as disgusting as the spiders themselves. I don’t have to use a curler for my lashes, and this mascara doesn’t flake or get clumpy. BEWARE – I buy the regular, washable brand. I have tried the waterproof and hate it! It doesn’t wash off at night when you’re washing your face, and goes on SUPER clumpy. Unless you realllyyyyy need waterproof for a reason, buyer beware. I use this when I’m a bridesmaid, and never have issues, buttttt I’m also not a super emotional person so don’t have to worry about tear streaks all down my face on a regular basis.

LIPSTICK:

  • MAC’s Flat Out Fabulous, Matte
  • How I use this: Apply directly to dry lips after you finish the rest of your makeup
  • Why I love this: I mean, how pretty is this color?!?! It’s such a nice change from red, and the perfect day or night shade. It’s lighter than the trending dark maroon shades, so looks super cute as a pop during the day with a basic outfit.
  • Price: $16

What I love most about all this makeup, is it lasts me FOREVER. All Tarte products easily last me nearly six months! I’ve had my MAC blush for over two years!! And the eyeshadow pallet is from 2 Christmases ago, and I use it everyday. I have to get a new mascara tube every 2-3 months, but everything else lasts SOOO LONG! So, for under $200, I’d say that’s a beauty steal, and totally worth it!

Mama Monday (tardy to the party by a day…sorry!)

I’ve “met” SO many amazing, inspirational, supportive TIU mamas since joining TIU and creating my TIU instagram account, and they are all way too beautiful to go unnoticed. Because of that, I’ve decided to start a mini blog series, “Mama Monday.” Sorry this one is a day late!! I’m having too much fun with my sister visiting, and we’ve been exploring and adventuring!
Without further ado, I’m so excited to introduce you to a mama who I’ve followed since Bikini Series. Carrie is literally one of the sweetest, most supportive TIU mom out there! She is there for SO many of us, always, and knows just what to say when we need it most. Personally, her kind words are always a light in my day, the sunshine to my rain clouds, and the Perfect Fit to my protein pancakes 😉

36 Weeks Pregnant [May 2013]
Here’s Carrie’s TIU Story…
At my final pregnancy checkup, I had ballooned to 192 pounds. My pre-pregnancy weight was 148. Before I got pregnant, I was already pretty miserably unhappy with my weight and my body, but was so unbelievably lazy. Anyway, I dropped 35 pounds from breastfeeding within about 3 months. At my annual checkup last November, I weighed 155. At my biometric screening in February, I was at 153.
I bought the TIU nutrition plan on April 2, 2014
I actually found Tone it Up at the end of January, and had been doing the workouts for a few weeks when we had that biometric screening. My eating, though, was ridiculous. Aside from crock-pot meals, I didn’t cook. We ate out all the time, a lot of fast food, and even though I made the best decisions (or, I thought I did) I wasn’t really seeing results. I bought the nutrition plan in April, and this October I weighed in at 136! (I honestly don’t care about the weight, though, anymore. It’s like icing on the tiu-approved cake.)
I started my TIU Instagram account after Bikini Series
I was so gung-ho for the Bikini Series, but ended up getting sick for 2.5 weeks of it and didn’t complete it. I did it over again with a group of girls, which is when I started my TIU Instagram account, and even though I didn’t reach my miles goal, I was really starting to see results. Clothes were fitting better, I didn’t hate being seen in shorts, & my confidence was growing.
Where are you now…
Frisky Fall really put it all together for me. I stick to the plan about 75-80% of the time (some weeks more), follow the weekly schedule, started running (well, wogging, Shelley’s term for a walk/jog) and have made my health and fitness a priority, which, as a Mom, can be so difficult to do.

I’m sure eventually I will go back to work, but for now, as a stay at home mom, my focus is on me, and making sure I can be the best version of me and raise a little girl who is happy and confident, and loves herself – which is something I am finally learning how to do after 35 years.

PB Blondies

So these little gems have been all.the.rage this week after K&K’s member email this week. But they’ve actually been floating around Pinterest & other clean eating & vegan blogs for the last few years…Can I just say I fell in LOVE with this snack/dessert after one of the lovely #TIUSanDiego beach babes brought these to our Halloween potluck!! Seriously, they are SO GOOD. I’ve made them twice since then, and have to freeze some or I eat the whole pan in like two days. I posted these on my Instagram a few weeks ago, and had a blog post pending, but K&K’s blast beat mine to the punch! It’s actually the exact recipe I used off Pinterest, so I’m sharing Ambitious Kitchen‘s recipe, to stay loyal to the original blog I followed to make these. Have to give them the original credit on this one, as they posted it back in April!

With that, you can see you definitely don’t have to be a member of the TIU plan to find this recipe…if you literally type “peanut butter garbanzo bean cookies” or “peanut butter garbanzo bean blondies”  into google here are your results –

Yep, you’re seeing that right, 164,000 results in .31 seconds! Now THAT is a recipe that’s clearly a hit. I’m actually a little sad for the original baker of this recipe, because clearly it’s been ripped off and recreated thousands of times. But, amen to whoever you are because these are AMAZE and I never in a million years would have thought garbanzo beans + peanut butter would make such delicious blondies. Also, whoever you are, thank you, again, because you’ve made me realize I can use garbanzo bean flour ($2.99 compared to $17.99 quinoa flour) as a flour substitute in all my baking recipes! I’m not sure if you were Ambitious Kitchen or not, but that’s where I first found this clean, clever recipe, so my love in this post is to you, Monique!!

The best part about these PB blondies is they have like 5 ingredients and are clean, healthy, AND delish. There are a ton of variations in baking techniques, but when I make them I use a square pan and bake them like brownies. You can also roll them up as cookies or bake as muffins, too!

Sooo, without further ado, this vegan, gluten-free & healthy PB Blondies recipe from Ambitious Kitchen titled “Flourless Chocolate Chip Chickpea Blondies with Sea Salt is the one I’ve been using for a while, I just leave off 1/2 the salt in the dough, and leave off the sea salt on top, because I find PB salty enough…

Recipe type: Bar, Healthy, Vegan, Gluten-free, Snack, Dessert
Prep Time: 5 mins
Cook time: 20 mins
Total time: 25 mins
Serves: 16
Secretly healthy blondies made with chickpeas, peanut butter, and chocolate. Taste amazingly like peanut butter cookies. Flourless and no butter! Natural ingredients.
INGREDIENTS:
  • Cooking Spray (I use coconut oil)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup all natural almond butter or peanut butter
  • 1/3 cup pure maple syrup or agave nectar (you can also use honey if you’re not vegan)
  • 2 teaspoons vanilla
  • 1/2 tsp salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/3 cup vegan (or regular) chocolate chips plus 2 tablespoons
  • sea salt, for sprinkling (I leave off, as I think they are salty enough)
INSTRUCTIONS:
  1. Preheat oven to 350 degrees F and spray 8×8 inch pan with nonstick cooking spray.
  2. In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in 1/3 cup of chocolate chips, I like to use dark chocolate because it has less sugar but it’s up to you. Note: Batter will be thick and super delicious, so you could actually just eat it on it’s own!
  3. Spread batter evenly in prepared pan then sprinkle 2 tablespoons of chocolate chips on top. (The batter may stick to your spatula, so I like to spray my spatula with nonstick cooking spray first.) Bake for 20-25 minutes or until toothpick comes out clean and edges are a tiny bit brown. The batter may look underdone, but you don’t want them to dry out!
  4. Cool pan for 20 minutes on wire rack. Sprinkle with sea salt then cut into squares. Makes 16 blondies.
NOTES:
  • Adding an egg to the batter will make it more cake-like, but not vegan.
  • You can use your favorite nut butter, just make sure it’s all natural.
  • Feel free to add in other things according to your dietary needs like nuts, dried fruit, or other types of chocolate (I LOVE using M&Ms!)

Weekly Tracker – Week 3 Holiday Hunny

Ahhh during holiday season weeks FLY BY faster than shooting stars! Can’t believe I’m already updating our third week of #holidayhunny and that Thanksgiving is literally right around the corner!

I’ve absolutely loved seeing everyone’s check-ins this week with gratitude for this tracker and the Secret Santa Sister #TIUmotivationalmail exchange! It’s extremely humbling, loving, and fulfilling reading everyone’s posts!

Here is my spreadsheet for next week! I’ve filled in additional workouts and PM Challenges in turquoise. K&K’s outlined schedule remains in the black. Feel free to do the additional workouts I’ll be doing, or stick to their original calendar! I’ve also added a small row to remind you to take those Bombshell Spells and Meta-D shots….apple cider vinegar is extremely helpful in fighting off bugs! Keep those germs away with a shot of apple cider vinegar a day!

TIU #HolidayHunny Week 2 Spreadsheet

Wow, is anyone else completely in awe that it’s already the second week of November?! AH!!!

With a new week upon us, comes a new TIU weekly schedule & my updated weekly spreadsheet! This week’s schedule only had PM Challenges listed for Friday and Sunday, so I filled in the other days with fun ideas we did during previous 8-week challenges. Q & A: TIU Mama Style

I absolutely LOVE that I get so many questions about my TIU journey whether they come through my Instagram, my blog, or my email. I may not have all the time in the world to reply to each & every one, but I try the best I can! As I sit here at my parents house, I hear Tanner running around playing with my mom, which means I have a moment to myself to sit here & FINALLY get to an email I’ve kept marked as unread since early October. [Do you guys do this? It saves me from opening emails and forgetting all about them when I don’t have time to reply right away!]

So my first Q & A mini forum comes from a fellow TIU Mama, Lauren, who even happens to be from my hometown of Northern California!

Hi Shelley, 

First of all congrats on your TIU anniversary! It’s pretty awesome to see how much you’ve accomplished in just 6 months– you are inspiring!

I have been “following” TIU & looking into it for a little over a year now but after having my 2nd girl–she’s a month old!– I decided to finally & officially dive in! You probably get a bunch of emails from other TIU girls but I’d love to ask you a few questions about your TIU journey. 

I’m thinking of buying the nutrition plan– do you use the plan? How do you make it work for your family? So far I’ve just tried to eat cleaner, I don’t usually eat bad just have a MAJOR sweet tooth!

I do use the plan – but not religiously. By that I mean I follow their general guidelines and principles. I try new recipes at least once or twice a week from their various editions, so I don’t get bored with eating clean and healthy. (If not, I would make the same two, mindless, quick things over and over again; chicken & veggies thrown in a crock pot haha). I make it work for my family by cooking larger portions. My husband eats a LOT. When he’s gone for business I have tons of leftovers, and am lucky I can eat them for lunch or dinner the next day. He used to grumble with the “new healthy” dinners that were rolling out of the kitchen, but like anything, time heals old habits! He used to love garlic bread and pasta, and we’d eat that at least once or twice a week. Now he likes seasoned veggies, or interesting new sides, and has accepted that quinoa or sweet potatoes have replaced pasta. When he’s on the road he gets all his fixes for fatty foods, and enjoys being healthy when he is home. I LOVE crockpot recipes, because I hardly have time to cook, and I love that the meat breaks down so soft so Tanner can eat it too! Same with the veggies! I just made a ground turkey meat sauce and it was PERFECT to feed Tanner! And stuffed peppers are always a great go-to!

I’ve always been a really healthy eater, too, but my sweet tooth is awful. Especially during the end of my pregnancy and the first 6-months post-partum. I swear that breastfeeding cravings were worse than pregnancy ones!!! I found myself eating chocolate for breakfast, lunch, and dinner. NO JOKE. If you see my pre-TIU before pictures, you’ll see that was true! I had always been thin and healthy, so post-pregnancy I definitely didn’t recognize myself. So I started slow….I started with tiny goals. Like only eat chocolate/sweets a few times a week, rather than dessert every night. Then down to a couple times, then down to one, then I didn’t really crave them anymore! If I’m craving something sweet late at night, I’ll eat a yogurt with fruit and carob chips, and this usually does the trick. If you would have told me that 6 months ago, and that that would curb my froyo craving, I would have laughed in your face!

So the BIGGEST thing I’ve gotten out of the plan has been how to change my diet. I’ve learned what ingredients I can substitute to make almost any of my favorite dishes clean and healthy! Especially with baking! Their substitutions have been such a huge asset to my weight loss! and they actually taste SO GOOD. Like their mocha brownies…omg…I actually hate coffee, but they don’t taste like it at all. They taste like delish truffles!

Also do you follow the workout schedules or do you make your own? I’m finding it a little tricky to fit in workouts so far but think it’s doable 🙂 

I do a little of both. My weekly spreadsheets I update each Sunday help me SO MUCH. Without them I was always scrambling to remember what day had what workouts, and found it annoying to always have to go back and search the sea of posts for what workout was scheduled for that day. I insert all the workouts and PM challenges they update to their calendar for the week, then leave blank spaces to add my own. I just joined a bootcamp class every Tuesday and Thursday that mixes Crossfit and Pilates for an hour, but other than that, I strictly only do TIU videos, and their #100by_______ miles challenges.

I’ve found I have to make a schedule for myself, and for Tanner to survive squeezing in my workouts and goals for the week ahead. So my typical day when Kyle is out of town traveling/I don’t have bootcamp at 6pm (those days I bring Tanner with me and we start bedtime when we get home, around 7:15pm) looks like this:

  • 6:30-7am: Tanner & I wake up
  • 7am (or whenever Tanner wakes up; it’s anywhere from 6-7): Diaper change
  • 7:05am: Tanner goes into his play yard, which I keep in the living room, in front of the TV I do my TIU workouts on. (I use Apple TV).
  • 7:10am: I look at my spreadsheet to see which workouts are listed for the day, and do those as my Booty Call, rather than my miles. Tanner sits best in the morning for about 30 minutes, so I can usually squeeze in two 10-15 minute videos, or one of the longer ones. Sometimes I can barely get through one, sometimes I can squeeze in a little more. Depends on the day, and I’ve learned to just go with the flow, and not be too hard on myself, or on Tanner when he doesn’t allow me to get through one.
  • 7:40am: Breakfast time for Tanner & me!
  • 7:45am: Change Tanner’s clothes for the day
  • 8:00am: Tanner playtime in playroom, and sometimes I get to sneak away to my computer on the outside of his gate and update a blog post, or work on the Elfster exchange, etc. It’s always something TIU technology related!
  • 9:30-10:30am: Tanner starts to get fussy for naptime
  • 10:30am: Nap time process begins (nurse to sleep)
  • 10:40-11:45/12: Nap time (if he’s struggling to fall asleep by nursing or on his own, I put him in the stroller and we go for a walk or run (or usually a wog!). He’ll usually fall asleep for nap time this way, and I keep walking until he wakes up. I can usually get 3-5 miles in depending on how long he sleeps! If I don’t get my miles in while he’s napping, I’ll try to go for an afternoon walk, or I have to wait until the next day. It’s always a tricky balance since he’s not the best at just hanging out in the stroller…if he does fall asleep at home, I usually try to get a HIIT video or two in for miles, or if I didn’t get to get a full workout in before breakfast, I’ll do the scheduled video while he’s napping. He only falls asleep in our bed (of course!) so I use my phone and do the videos on the carpet in front of our bed, so I can make sure when he wakes up he doesn’t crawl off the bed!
  • 12pm: Play time
  • 12:30pm: Lunch time
  • 12:30-3:30pm: Play time
  • 3:30pm: Snack time
  • 3:50-5pm: Play time
  • 5pm: Dinner time
  • 5:30pm: Bath time
  • 6pm: Bed time routine begins
  • 6:30pm: Tanner bed time
  • 7:00pm: I finally get to cook/eat dinner
  • 8:00pm: Hopefully all the laundry, dishes, and house cleaning is done and I can watch one of my favorite shows I’ve DVRd!
  • 9:00: Bedtime TIU instagramming 😉
  • 9:30pm: Tanner usually wakes up to nurse
  • 9:30-10pm: Mama bedtime!

Hopefully that helps give you an idea of where I squeeze in my workouts/miles

What was it like when you first started out? What was hardest? I haven’t been given the ok yet from my dr to workout yet but I’m excited to start but know it will be a lot of work!

HARD and EXHAUSTING  I think the hardest part was trying to get a schedule down, when as newborns in the first year, theirs are constantly changing. Every time I thought I had it figured out, Tanner’s naptime would change, he wouldn’t nap, he’d nurse all day….anything and everything was always changing!! So I had to LET IT GO. I had to just do what I could, where I could, with what I could. This is why I didn’t start my TIU journey until 8-months post-partum, until I was physically and emotionally ready to commit to a lifestyle change. Tanner had a semi-consitent schedule, so I was able to figure out a workout schedule that worked for the both of us.

I started with small, achievable goals. I joined TIU during Bikini Series this year, and tried to at least do a few workouts a week. I tried to eat clean and healthy and cut out desserts. I didn’t accomplish #100bySummer, but I tried the best I could. I actually still had pain and numbness from my c-section so walked almost all my miles, because running was still really painful and hard. I actually ended up tearing my hamstring, so was forced to focus more on my diet and eating clean. I finally kicked my sweets habit because of it! So just finished Frisky Fall last week was completely different!!! It was so much easier because I understood TIU so much more. I created a lot of things that helped me achieve my goals (the tracker I mentioned earlier), and found creating a lot of my own random things helped me stay motivated. (like the mass Elfster exchange, mileage trackers, new recipes, etc.)

Just remember it’s OKAY to get a slow start. It’s OKAY to be exhausted  It’s OKAY for your baby to mess up your entire day. There’s always tomorrow, there’s always a second chance! 

If you have any advice or tips for someone just starting out if love to hear them!!

My number one tip is to MEAL PREP! Even if you can only do one or two days prep. Or menu planning so your grocery shopping trip stays focused and organized…..also, sign up for the nutrition plan! Try a few of the free recipes they post first to see how you like them, then go from there. When you buy the plan, PRINT IT! That’s my #1 key. I didn’t print mine for like the first 6 months, and because of it, never tried a new recipe or fully understood what it was all about. It’s one thing to read it from a computer, another to have a binder right in front of you with access to everything! If you’re not ready to drop $150 on the plan, do research to see what kinds of clean foods your family would be okay with eating, and try to browse Pinterest for some recipes that work for your fam. If your focus is more on toning, set small goals to achieve. Like you’re going to do __ workouts per week, or walk/wog/job/run ___ miles per week. Start with small things you know you can accomplish so you get the confidence you need to set larger goals. Remember to BREATHE and know that being a mom comes first. It’s hard enough work on its own!!! So find a balance that works for you, your family. and know you are worth it. You’re worth 15 minutes to yourself to do a workout. And you’ll feel SO much better because of it!

The Life of a “Single” TIU Mama

So I say “single” because all of you know I’m married, but my better half is a traveling salesman, so it’s just Tanner & I most of the time. It’s one of those odd dynamics that thankfully works for us, because Kyle likes to constantly be on the go surrounded by chaos, people always around, and stimulation, where I thrive on alone time, quiet time, and although I’m a total wanderlust, I still need some form of structure to feel inner peace. I know, I know…quiet & alone time as a mom to a 14-month old? Ya, it’s pretty scarce. But when bedtime rolls around at 6:30pm, it’s my time to breathe, relax, unwind. That means cleaning the house, picking up toys, making dinner, doing laundry, or working on something TIU related, but somehow, that all grounds me…

 

I’m on the “clock” from 6am to 9pm.

 

I don’t have a nanny or a babysitter. I don’t have a husband who comes home at 5pm each night and relieves me from mom duty, or who cooks me dinner. I don’t have family that live locally. I don’t have a baby that “sleeps through the night.” Yes, “I’m stillllllll breastfeeding”. [seriously, I’m so over this question; if you must know I’m down to two times a day; morning and bedtime…not that it affects anyone’s life who judges me; I’m doing the best.I.can…have you ever tried prepping bottles when it’s just you 90% of the time? Then cleaning them, sanitizing them, etc., etc.? It stinks]. I don’t have two perfectly trained doggies or someone who picks up their poop every day; they’re actually nuts and I think Harley needs Prozac. I don’t have a gym membership, or belong to a fancy club of any kind. I no longer have a current “career” after officially working my last wedding; yet I don’t get a day off; I’m on the “clock” from 6am to 9pm.

 

I try to find a calm moment amongst the madness and relish it

 

With all the things I don’t have, I still have SO much more. I have a hard-working husband who’s crazy, constant travel allows me to stay home with Tanner. I have my TIU sisters who get me through each day more than they’ll ever know, and K&K who post free videos that allow busy mamas to still get in a great workout. I have a best friend who just moved to town who supports me, helps me with Tanner, watches our dogs when we are out of town, and who encourages me to be me. I have an amazing mom group who gives me an outlet of people to socialize with when I otherwise may not see another human being to have a conversation with for weeks. I have a baby who loves me unconditionally, and absolutely lights up my life. He snuggles me at night and makes my heart SO FULL. I have a milk supply that is still going strong, after Tanner’s first three months life with virtually no-supply due to an undiagnosed tongue tie. I have two crazy labs who are always happy to see me, and add spunk to each day. They may not walk like angels on leashes, but they sure make me laugh. I opened my wedding planning company from the complete ground up; met with strangers to network, and they became some of my closest friends. I may not get weekends or holidays “off”, or be off before 9am and after 5pm, but I survive. I have the cutest house ever who’s deck overlooks the ocean with 180 degree views. I have a neighborhood full of smiling, sweet neighbors, who wave and say hi when we walk by. I can run to the ocean and back, or walk to a shopping center. I can go to the beach any day, any time. My sister is my best friend and my parents are two of the most loving people I know. I’m so thankful to live in such a beautiful town, where they are only a 2 hour plane ride away now. I could go on and on, but the important thing is deep down I know that life is SO good, and although some hours and days feel like the longest ever, the months and years are FLYING. So each day, I try to find a calm moment amongst the madness and relish it; soak in the good, bad, ugly, and remember that each thing, each moment, each experience has beauty. (almost always, anyway!)

 

Finding balance.

So how do I balance it all? I honestly have NO CLUE. Some days I want to stay in bed and hide, but my 8-toothed sweet little monster & four-legged loving little psychos would never allow that. and when Tanner smiles at me with those silly little teeth, or my dogs wake me up by attacking me with kisses, my heart melts, I roll out of bed, and my clock begins…and another crazy, beautiful day has begun.

I LOVE festive dishes for holiday celebrations. There’s just something about plates filled with red & green that give you the warm and fuzzies.

 If you’re looking for a yummy, festive dish to bring to your next holiday potluck, function, or the perfect side for Thanksgiving or Christmas, look no further! These were even non-brussle sprout fans approved (and my toddler ate more than I’ve ever seen)!

Sassy & Sweet Holiday Brussels

INGREDIENTS:

  • 1 package or stalk of Brussels sprouts, washed & each sprout chopped into fourths
  • 6 slices all-natural, no-nitrate bacon or 2 apple-chicken sausages, cooked
  • 1 tablespoon avocado or coconut oil (or ghee) melted
  • 1/2 cup pomegranate seeds
  • 1 tablespoon organic garlic, minced
  • Ground pepper to taste

Glaze:

  • 1/4 cup dijon mustard
  • 2 tablespoons 100% pure maple syrup
  • 1 teaspoon balsamic vinegar

 

DIRECTIONS:

  • Preheat oven to 450
  • In a large pan, add oil and warm
  • Add Brussels, garlic, and pepper and toss
  • Cook on medium, stirring occasionally, and cook until Brussels are al dente 
  • In small bowl, mix together mustard, syrup, and balsamic vinegar to make glaze. Set aside.
  • Once Brussels sprouts are semi-soft, put in oven to broil. Cool for 5-10 minutes or until crispy
  •  Add bacon and glaze to crispy Brussels and mix
  • Stir all ingredients together until Brussels sprouts are coated and evenly glazed
  • Add pomegranate seeds
  • Toss together lightly & serve immediately
