May you always be as strong as what’s inside your cup

I’t’s been one of those Mondays…

A sick toddler meant a sleepless Sunday night, a morning that came way too early, and a wholeeeee ‘lotta chaos in our house this morning, which has lingered into this evening. Having a split family and co-parenting is always a challenge dealing with transitions between my house and T’s adventures with his dad. Add Christmas and the excitement of Santa, elves, and new pressies on top of a little guy who’s not feeling well, and that’s pretty much a bad behavior, confused-attention-seeking-bundle-of -two-year-old munchkin.

That being said, I was in desperate need of a pick-me-up this morning, and coffee just sounded cozy. I’m a tea girl through and through, but have been drinking a ton of green tea all week, so needed a change. Not being able to leave the house with a sick nugget, and trying not to order a sugar-loaded fancy schmancy froo-froo coffee shop concoction, I decided to attempt to make a coffee I actually liked. I don’t really even like the taste of coffee; that’s why I prefer tea. But when I do order it, I like crazy flavors (always loaded with thick sugary syrup and caramel and deliciousness), so was trying to be good and make a clean, yet yummy #thisdoesntreallytastelikecoffeecoffee coffee. youfeelme?!

BOOM. It was a total success. If you’re not a huge coffee fanatic like I am, but want to try an experiment because you’re in need of a change to your tea game, in need of an extra caffeine boost, or just want to try something different as a new year’s resolution, I hope you find your day filled with a little cup-o-joy from this cup-o-Shelley. Or better yet, if you like coffee, you’re the true critic then, and I hope you like this 😉

 

Morning Mantra Cup-o-Shelley

Ingredients:

  • 1 cup (approx) organic medium roasted coffee (I use a K-cup)
  • 1/2-1 tablespoon organic ground cinnamon
  • 1 teaspoon organic, pure vanilla extract
  • 2 drops organic, pure peppermint extract
  • 1/8 cup unsweetened coconut milk (use less or more depending on your “coffee taste” preference)
  • 1 tablespoon raw, local honey

Directions:

  1. Brew coffee and pour into mug of choice
  2. Add remaining ingredients to coffee mug
  3. Stir & enjoy!

 

Double dog dare you to pair this with my clean coffee cake recipe. You’ll be wandering around with pixie dust under your toes saying…

OH HEY, MONDAY (or insert day of choice).
