Why they’re good for you: Loaded with potassium and magnesium, kidney beans help keep blood pressure in check, while their high fiber content helps reduce bad LDL cholesterol, fighting off heart disease. Kidney beans are also rich in iron and protein, making them a great meat substitute for vegetarians  [Google search, 2016].
TUNA FISH
Heart Health: Perhaps the most common health benefit that is attributed to tuna fish is its significant impact on heart health. In terms of reducing coronary heart disease, tuna fish has very high levels of omega-3 fatty acids, which help to reduce omega-6 fatty acids and cholesterol in the arteries and blood vessels  [Google search, 2016].

Tuna that’s green?! Ew, sounds disgusting, I know. But hold up a minute…it’s clean, filled with vitamins and minerals, and packs a serious protein punch. and hey, it’s almost Saint Patty’s day, so green is acceptable, and this is perfect to pack in your lunchbox so you don’t get pinched!
Shamrock Tuna

INGREDIENTS:
  • 1 large can all white, organic tuna fish, rinsed and drained
  • 1/4 cup kidney beans, washed, drained, and dried off
  • 1 avocado, pitted and smashed
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery seed
  • 1 tablespoon Bragg’s apple cider vinegar
  • Couple shakes of ground pepper
  • 1/8 teaspoon Mexican oregano
  • 1/8 teaspoon fresh lemon juice
  • Pinch garlic salt

 

DIRECTIONS:

  1. Add all ingredients except kidney beans in a medium sized bowl and mix together until everything is evenly combined
  2. Add kidney beans and mix
  3. Eat alone, on a piece of bread, in a wrap, on lettuce wraps, on bell pepper, or any way your little heart desires! This is perfect to pack for a picnic or school or work lunch too! Tip: If not eating immediately, leave the avocado pit in it to keep it from browning too much.
  4. Enjoy!

When you’re craving an apple crisp and want to challenge yourself to go totally rogue and make it from scratch, with no clue if it’s going to work or not, you take a risk of either creating magic, or a total baking fail.

Good thing for you and I both, it wasn’t a fail, and is, in fact, one of my new favorite desserts – because it’s so healthy you can eat it for brekkie too! Now THAT’S a clean eat-this-anytime-“dessert” success!

Healthy Cinnamon Apple Crisp with Toasted Coconut and Cinnamon Drizzle

Ingredients:

“Crust”:

  • 1 cup pitted dates
  • 1/4 cup unsalted cashews
  • 1/4 cup unsalted walnuts
  • 1 can S&W garbanzo beans, rinsed a few times
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 tablespoons ground cinnamon + 1/2 tablespoon cinnamon (for toasted coconut)
  • 1 cup gluten free oats
  • 1 cup applesauce
  • 1 tablespoon pure vanilla extract
  • 5 tablespoons unsweetened shredded coconut
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut sugar + 1 tablespoon coconut sugar (for toasted coconut)
  • 1/4 teaspoon sea salt or apple cider vinegar
  • 4 tablespoons coconut or avocado oil or ghee
  • 1/4 cup unsweetened coconut milk
  • optional, 1/4 cup gluten free flour
  • optional, 3/4 cup Enjoy Life dark chocolate chips

Apple filling:

  • 2 Granny Smith apples, sliced thinly OR 1 can of Big Slice kettle-cooked apples
  • 1 tablespoon ground cinnamon
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons shredded, unsweetened coconut
  • 1/2 tablespoon avocado or melted coconut oil

Cinnamon Drizzle:

  • 4 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon ground cinnamon
  • 2 tablespoons unsweetned coconut milk or coconut cream
  • 1/8 teaspoon coconut oil

Directions:

  1. Preaheat oven to 375 degrees F
  2. Spray or rub a baking pan with coconut oil
  3. In a small frying pan, add coconut, 1/2 tablespoon cinnamon, 1 tablespoon coconut sugar, and toast until lightly browned
  4. In a food processor, add ALL remaining ingredients from crust list. If choosing to add chocolate chips, you can either add them to be ground up in the “dough”, or chose to fold them in afterward.
  5. Use food processor to blend everything together until a dough-like consistency is formed
  6. In a medium-sized bowl, add all ingredients listed under the “apple filling.” Evenly mix with hands until apples are evenly coated.
  7. Line baking pan with a layer of dough (half of what you made; leave the remaining half be for now).
  8. Add toasted coconut on top of crust.
  9. Add apple filling, creating an even layer of apples on top of toasted coconut
  10. Top apple layer with another (thin) layer of dough
  11. Optional: double apple filling and add another apple layer to top
  12. Bake for approximately one hour, or until dough is completely cooked through (should be consistency of a blondie or cake)
  13. In a small bowl, add ingredients in cinnamon drizzle and stir together. Keep to side until ready to serve
  14. When dish is fully cooked, remove from oven and let cool for about 20 minutes
  15. When ready to serve, cut into squares and (optional) top with cinnamon drizzle. This is AMAZING topped with ice cream. Either splurge on a scoop of the real-deal since this pie/strudel is clean, or use your favorite dairy-free alternative. I LOVE Steve’s burnt sugar vanilla with this and highly recommend it! 🙂

If a pancake could be described as P R E T T Y, then these gems are it. Pink. SUPER healthy. Packed with nutrients [no seriously – you’d never guess the mishmash of bizarre ingredients that make these incredibly amazing for you]…Delish.

Pretty in Pink Healthy Pancakes

INGREDIENTS:

  • 1/4 cup Trader Joe’s red juice [Beet Juice, Cucumber Juice, Celery Juice, Apple Juice, Carrot Juice, Spinach Juice, Ginger Juice].
  • 2-3 tablespoons pomegranate seeds
  • 1/4 cup organic blueberries
  • 1/4 cup coconut milk
  • Fresh-squeezed lemon juice from 1/2 lemon, or about 1/2 tablespoon
  • 1 cup gluten free baking flour (I like Trader Joe’s)
  • 2 tablespoons melted coconut oil
  • 4 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened, organic applesauce
  • Optional: 1 scoop vegan, non-GMO, organic vanilla protein powder 
  • Optional if not vegan: 1 egg + 1 scoop About Time protein or pancake mix

DIRECTIONS:

  1. Heat electric skillet to 325-350 degrees F
  2. In medium sized bowl, add all ingredients except fruit, and mix well, until chunk-free. If too runny, add more four. If too thick, add more juice and/or coconut milk. Once batter is achieved, add fruit and gently mix.
  3. Spray skillet with coconut oil
  4. Scoop about 1/4 cup of batter, and add pancake rounds to skillet
  5. Cook each side about 1-2 minutes, flipping back and forth to avoid burning
  6. Cook until middle is done, and serve warm!
  7. Optional: top with additional fruit and pure maple syrup!

If there’s one thing I’ve learned over the past year, it’s that life is unpredictable, change is often unanticipated, difficult, and terrifying, but that every slowly closing or slammed door leads to a new journey, a new beginning, and a new set of experiences. When your boat is rocked, adjust the sails and try to navigate to smoother seas.

I think back to being in Girlscouts when I was little, and how I could never figure out how to properly use a compass when we were camping; like wtf is this thing and how will it ever help me if I am lost; is north even north? I give up....like is this even a real gadget that people actually use? Point of the story?

  1.  I know a compass is, in fact, a real, life-saving gadget, yes.
  2. However, life doesn’t have a magic little tool that serves as a perfect guide to save you when you’re lost, telling you exactly which way to climb, walk, or drive.
  3. There’s not a specific device, person, or scenario that will truly point you exactly to your true north and always help you find your way, per-say.
  4. It takes a bit of mountain climbing to reach a destination, and a journey full of switchbacks, wandering, and where-am-I-and-what-am-I-doing. 
  5. It takes YOU. You are the best little device you can find, use, and depend on to find your north – or your east, west, or south. Or a combo of the four.

Your heart, your soul,  your will, your determination, your drive, your strength, your discoveries, your curiosity, your being, your sense of wonder, your magic, your everything.

You are your own advocate, cheerleader, path-leader…your own compass. Let yourself and all that makes you whole guide you through the good times and the bad, but don’t be afraid to lean on others when you need help, advice, or extra navigating.

Finding your True North is about discovering what really brings enthusiasm and passion into your life.

Being true to yourself is validated when you’re no longer afraid to let go of what’s not meant to be, what doesn’t feed your soul, what doesn’t make you happy, and what doesn’t nourish your body, your being, or your lifestyle. 

The moment I decided all of the above is an absolute necessity to happiness and moving on from testing times, and fully began to acknowledge, appreciate and honor gratitude and positivity, were the moments I began to feel whole again. The moments I began to notice wounds were healed and time keeps ticking. The moments I felt like myself, felt a glow in my heart and my soul, and felt content and at peace with the person I had been fighting to be and continue to become. It was in these little moments and mini epiphanies that I realized we all seek different paths, different beginnings, different endings, different wishes, wants, desires, adventures, opportunities…and we all go about writing the chapters of our books differently. Some of us race to an ending. Some of us start rather slow to begin writing at all. Some of us take a pause from a “deadline” to reflect and accept “lost” time, which is considered research (right??); Some of us skip pages, some of us may take a year to collect what we had hoped to jot down in a month. Some of us find inspiration from others, some of us find it in solitude. Some of us have lightbulb moments at 5am, some of us hear them as we’re drifting off to sleep, or even in our dreams.

Just like reading, we all learn at different paces, in different ways,

  • Visual (learn through seeing)
  • Auditory (learn through hearing)
  • Tactile (learn through touch)
  • Kinesthetic (learn through doing and moving)

…and therefore explore, discover, and write the chapters of our life, our adventures, and our lessons at a different pace. We all go about our own ways of “research” through life, whether it be through love, careers, moves, laughter, grief, happiness, change, growth…every day experiences. The little things are what build strength, character, and molds who we are, and shapes us into who we’re meant to continue to become.

A few months ago I shifted away from a blog + social media channels specifically focused on fitness. There was so much more to me, my body, my soul, and my being than a sit up, burpee, or mile jog [miss my made up terms? This is “Shelley” for a walk/jog]. I have a significant back injury that no longer allowed me to be defined through bootcamps + online fitness posts, or workouts alone, because I had to take a serious break from most movements that kind of defined my brand and me.

It was then I decided to reflect on what else embodied me, spoke to me, and did some soul searching about what I wanted from life, what I wanted to share with my readers/following, and how I wanted to be inspired and inspire others…….

I took a good look at who I currently was, who I wasn’t, and who I wanted to be. I wrote down a list of things I wanted to accomplish, places I wanted to see, people I wanted to meet, adventures I wanted to explore, career goals, mom goals, and little things I wanted to see, touch, feel, accomplish. The day I decided there was so much more to me than dwelling on the past and what I COULDN’T do or control, was the day the lightbulb went off that it’s okay to feel lost. It’s okay to feel scared. It’s okay to feel like sometimes our life crumbles, is full of shambles, and we’re not really sure who exactly we are, or even who we want to be. The beauty in this is we FEEL. We feel vulernable. We feel magic. We feel depth. We just feel, period.

“It feels good to be lost in the right direction.”

So ask yourself this….what do you hope to leave behind as a legacy? What do you hope to do today that builds a better tomorrow? Create the foundation of your life, just as you want it to be. If you don’t like something, change it. Whether that’s within yourself or around you, commit to yourself, and how you want to grow.

People will judge you and criticize you when you’re happy, when you’re down, when you’re feeling pretty, or when you’re feeling unlike yourself ANYWAY. Insert quote about how you may the juiciest peach in the world, and there’s still someone who doesn’t like peaches….

Continue to do what speaks to you, inside and out, and remember to hold your head up high, proud, and continue to march forward. Get rid of the glue weighing you down and move forward. Always. With one foot in front of the other, one windy dirt road at a time. Remember you are strong, beautiful, capable, and no one…not one single person…is YOU. and that is your gift to yourself, others, and the whole wide world.

Gluten Free Blueberry + Raspberry Lemon Loaf

Is there anything better than blueberries + raspberries + and lemon? Something about those flavors go together like two peas in a pod. Whether it’s sorbet, ice cream, baking, pancakes, a smoothie….they’re just YUM. So when I wanted to combine them into a lemon loaf, they were PERFECT. An angelic little harmony of zesty + sweet, and absolutely perfect for a weekend baking project so you have slices of this gem all week long for brekkie.

Gluten Free Blueberry + Raspberry Lemon Loaf

IMG_1195Yields one loaf // 12 muffins // 36 mini muffins. Double recipe for two // 24 // 72.

Ingredients:

  • 2 cups gluten free baking flour (I like Trader Joe’s) and one extra tablespoon (keep separate)
  • 3 tablespoons unsweetened almond or coconut milk
  • 3 tablespoons orange juice
  • 1 1/4 cups plain, lemon or vanilla Greek yogurt, OR plain whole-milk yogurt. (To make VEGAN, use a daily free yogurt, or substitute applesauce for yogurt)
  • 1 cup coconut sugar
  • 2 teaspoons grated lemon zest (approximately 2 lemons)
  • 3/4 teaspoon pure vanilla extract
  • 1/2 cup avocado or coconut oil, melted
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • Pinch kosher salt
  • 1 1/4 cups plain, lemon or vanilla Greek yogurt, OR plain whole-milk yogurt
  • 1 cup coconut sugar
  • 3 large eggs (To make VEGAN, substitute 1/4 cup applesauce per egg. Add more flour if you need to adjust batter from being too runny)
  • 1 1/2 cups blueberries, fresh or frozen, thawed and rinsed
  • 1/4 cup raspberries (optional; as these do tend to make the loaf a little on the soggy side at first since they disintegrate)

Directions:

  1. Preheat the oven to 350 degrees F. Grease bottom and sides of one 9 x 5-inch loaf pan with coconut oil; dust with flour, tapping out excess.
  2. In a medium bowl, mix flour, baking powder and salt; set aside.
  3. In a large bowl, whisk together the yogurt, coconut sugar, eggs, lemon zest, vanilla and oil. Slowly add the dry ingredients into the wet ingredients and mix.
  4. In a separate bowl, mix the blueberries with the extra tablespoon of flour, and fold them very gently into the batter.
  5. Pour the batter into the prepared pan and bake for about one hour, or until a toothpick inserted in the center of the loaf comes out clean. My oven is ancient, and this loaf took almost an hour an a half. So test at an hour, and keep cooking accordingly. If making muffins, adjust cook time accordingly.
  6. Let loaf cool in the pan for about 20 minutes before removing. Remove and continue to cool on a wire rack on top of a baking sheet.
  7. Serve and enjoy! I love this in the morning with tea 🙂

So, I’ve made cauliflower crust pizza a handful of times, but holy molyyyyy, one has never tasted this good, or looked so pretty. As a health + foodie lifestyle blogger, sometimes you just need to trust your gut and go rouge on your own recipe…

Cauliflower Crust Pizza

Ingredients:

  • 1 large head of cauliflower (about 7 cups)
  • 2 tablespoons Pizza Flavor God
  • 1 tablespoon Ranch Flavor God
  • 1-2 eggs depending on how large your cauliflower head is
  • Toppings of choice + Sauce of choice; we used
    • 1 yellow bell pepper
    • 1/4 fancy-schmancy salami
    • Sweet cherry tomatoes
    • and two sauces; organic tomato sauce and organic pesto sauce
  • 1 1/2 cups “Pizza” shredded cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 tablespoon crushed or minced garlic
  • 1 teaspoon avocado oil or healthy oil of choice
  • Fresh basil, sliced into tiny pieces

Directions:

  1. Preheat oven to 425 degrees F
  2. Use a food processor to break up cauliflower until it becomes the consistency of rice
  3. Lay cauliflower out on a large cookie sheet and COMPLETELY dry it out. This is extremely important or your crust will be mooshy and super soft. Use paper towels, a towel, and pop it in the oven for a few minutes; whatever it takes for liquid to be absorbed
  4. Once dry, add into a bowl and mix in with FG seasonings + garlic + egg(s) + oil until it becomes a spreadable consistency
  5. Our “dough” made three medium sized pizzas; keeping them on the smaller side helps crust get crispier. Spray two cookie sheets with healthy oil before adding dough OR preferably, add dough to pizza stone(s).
  6. Once your dough is spread, place in the oven and cook for about 15-20 minutes, or until crust is as crispy as can be, without burning. Check the middle and adjust heat accordingly.
  7. Once crust has reached desired crispiness, add sauce, toppings, and cheese. Sprinkle a little more pizza + ranch flavor god on top
  8. Put back into the oven and bake about 6-10 minutes, or until toppings are lightly browned and cooked to your pleasing!
  9. Remove from oven, let cool for a few minutes, and use a pizza cutter to slice, and enjoy!

When you and your neighbors have been rotating being sick & spent most of January as an unintentional dry-month because of it, it’s time for a little creative mixology to the rescue.

What do you do when you feel like you’re on the borderline of needing a health cleanse & a cocktail after a long week?! Marry the two.

One of my new year’s resolutions was to do something I would never do, that scared me, put me out of my comfort zone, and was just for fun. So I used one of my Christmas gifts, a Groupon to Masters of Bartending, and thanks to Arny’s awesome skills + patience + knowledge, I have a few new tricks up my sleeves, and a cert to prove it. What was my goal?

To have fun. To learn. To do something “just because.” To complete a task off my #2016AdventureList. To challenge myself. To go out of my comfort zone. To feel proud of something. To work on #ProjectWholePerson. To be present. To be inspired. To learn something new. 

So I took what I learned and paired up with my neighbor, Cassie, who is an uber talented graphic designer and artist; check out her skills at Creatively Cass Designs // @creativelycassdesigns (with a secret past of a college bartender), and we whipped up these two beauties. Cheering to a TGIF, we kicked our feet up, threw our hair in messy buns, caught up on life, and watched trashy, girly, reality TV while enjoying these healthy craft cocktails.

SASS-N-SOUR MOJITO

Yields two cocktails

Ingredients:

  • 10 fresh mint leaves, muddled OR 2-3 drops mint extract
  • 4oz Deep Eddy’s Grapefruit
  • 1/4 C Grapefruit La Croix
  • 1/2 bottle of Mojita Kevita
  • Raw, local honey on the end of a stir stick
  • 1/4 of a fresh squeezed grapefruit
  • 1/2 teaspoon freshly shaved ginger
  • Grapefruit rind piggy-tail garnish + fresh mint sprig
  • Coconut sugar (rim)

Directions:

  1. Add all liquid ingredients but the Kevita + La Croix to a shaker tin + shaved ginger + fresh-squeezed grapefruit + mint leaves, with ice
  2. Shake well until chilled (you can serve this as a shooter now if you’d like)
  3. Add La Croix + Kevita to shaker and give one shake to blend
  4. Wet rim of glass with lemon juice and add coconut sugar
  5. Using a cocktail strainer, pour shaker contents into two glasses, evenly shared
  6. Add honey-coated stir stick
  7. Add piggy tail garnish to the side of each rim
  8. Cheers & enjoy!

  • 1/4 C Lemon La Croix
  • 1/2 bottle of Lemon Cayenne, or Mango Coconut Kevita

  • 1/2 frest squeezed lemon
  • Freshly shaved ginger
  • Blood orange or lemon rind piggy-tail garnish
  • Coconut sugar (rim)

  2. Shake well until chilled (you can serve this as a shooter now if you’d like)
  3. Add La Croix + Kevita to shaker and give one shake to blend
  4. Wet rim of glass with lemon juice and add coconut sugar

We’ve officially passed the first month of the new year – what were some of your goals and resolutions? Are you setting your intentions to make sure you stick to them? Life can get overwhelming, and if you set too many unachievable goals for yourself, you’ll get overwhelmed and give up before you even start.

One of my favorite practices of the new year has been journaling. It’s funny because when my sister and I were little, we used to journal every single vacation we took to Jackson Hole. My family has a timeshare there, so we always went every year/every-other year, and had our special notebooks we’d fill with what we did, where we went, what we saw, and what we ate. We’d collect postcards, stickers, maps, draw doodles, and write entries each day. Our timeshare week always seemed to overlap the first couple days of school once California switched to pre-labor day-it’s-time-to-start-school-already, so we’d turn them in as an exchange for missing a school day.

Then this year, like I wrote in my Nourish Your Soul in 2016 post, my friend John told me about “adult journaling”, and how his favorite was the Five Minute Journal. Now, anyone who knows me knows it takes a lot for me to trust people’s generic opinions on…anything. Hi, I’m a Gemini, and am always indecisive and have trouble sticking to a routine and repetition. So this thought of journaling was…slightly confining, yet intriguing. BUT John is super admirable, as he runs Surf Park Central, and the more I researched journaling and heard others light up when talking about it, the more appealing it became to me. This year my number one goal is to seek balance – in every aspect of my life. The first couple days I began to journal, following the Five Minute Journal Pattern and a couple other formats, I was obsessed. It makes you seek gratitude, and feel really proud of yourself…and literally only takes five minutes. and was a nice sense of closing the day with quiet, unplugged time.

As for my second big goal of 2016, it’s to go on ADVENTURES. The past six year of my life, I went on a lot of vacations, but at the end of the day, you can go 192387 places without them truly speaking to you. We travel to seek something – a sense of wanderlust, an appreciation of beauty, the zest for exploration.

Going through a divorce, you learn a heck of a lot about yourself. And looking back, one of the things I realized as that I personally bent over backward for my then-spouse and the common-good of our marriage, rather than myself. Of course, that’s called compromise, but when you start to loose a large chunk of your soul and your being, that’s where the unbalance happens, and you retract. I realized the adventures I was seeking were’t being fulfilled, and what I wanted out of life was withering away putting myself last.

So this year, I made a vow to myself and to Tanner that we are going to DO things. SEE things. APPRECIATE things. Explore. Wander. Love. Seek. Be present.

 

And my third large goal has been to find fitness and health in every day aspects of life. You don’t have to be the fittest, skinniest, healthiest person in the world to want to better yourself. You don’t have to lift the heaviest weights to be the strongest. You don’t have to starve yourself to get a goal body. You just have to do simple, consistent routines that eventually yield huge results. For me, that’s staying active – eating well, doing attainable exercises that don’t overdo my current back injury. I was low on groceries and scrounging through my fridge and cupboards for something healthy, and was on a coconut sugar + cinnamon kick after my healthy french toast recipe yesterday, so came up with these. and holy s&^% so glad I did. New. Fav. Snack.

Make these for yourself, your boyfriend, your girlfriend, your dog (kidding, don’t do that – not a supporter of people food to animals).

Make them for a party, your neighbors…like anyone. Why? They cost like, nothing, and will make you look like a bad B in the kitchen.

COCONUT APPLE CRISPS

Ingredients:

  • One Granny Smith Apple
  • 1 tablespoon organic coconut sugar
  • 1/2-1 teaspoon ground cinnamon
  • 2 tablespoons organic, unsweetened, shredded coconut
  • Melted coconut oil or avocado oil
  • optional: tiny dash of nutmeg or other favorite “crisp” seasonings; i.e.: pumpkin spice, etc.

Directions:

  1. Slice apples into “chips”, removing the core and seeds
  2. In a small bowl, mix all dry ingredients
  3. Set a medium-sized pan to low-medium heat
  4. Coat sliced apples in dry mixture
  5. Spray or coat pan with oil of choice
  6. Add apples one side down to pan and leave about 30-60 seconds, continuing to flip apples constantly so they don’t burn.
  7. Each time you flip, scrape excess toppings off the pan and re-add to apple top
  8. Serve and enjoy!
  9. OPTIONAL – You can also coat all of these in an oven-safe pan and bake at 350 for about 10 minutes. You can go softer if you like and enjoy as a bake, but I served these as a crunchy “chip”
