Sunday means brunch or meal prep to many, so whether you find yourself looking for a healthy family breakfast option for the weekend, or want to make a fab pancake that will last you all week long {I freeze them and toast for a quick brekkie!} these gems are a winner.

Seeking brunch balance? Serve these with mimosas and cut the guilt of “real” pancakes packed with butter and sugar. Seeking a clean week of healthy eating? Sub these as part of your breakfast routine throughout the week!

Healthy Lemon Rasbperry Pancakes

These are a great pancake option, as they have easy options to be vegan, gluten free, soy free, nut-free, and dairy free.

Ingredients:

  • 1 C GF {Gluten Free} flour
  • 1 C GF oats
  • 1/4 C applesauce
  • 1-2 eggs {or use extra 1/4C applesauce}
  • 1 tablespoon maple syrup
  • 1 scoop vanilla Perfect Fit {optional} or sub with an extra 1/4 C GF flour OR 1/2 cup plain Greek yogurt
  • 1 1/2 teaspoons pure vanilla extract
  • Zest of 1 organic lemon zest {inside batter}
  • Extra lemon zest {for topping}
  • 1 C organic raspberries {or blueberries}
  • 1/4 cup berries {to top}
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 tablespoons coconut sugar
  • 1 tablespoon raw, local honey, melted
  • 1/4 C orange juice
  • 1/4 C unsweetened coconut milk
  • 1/4 cup original Sealand Birk or extra OJ or milk
  • 2 tablespoons coconut oil

Directions:

  1. Add all dry ingredients in one bowl and mix
  2. Add all wet ingredients in a second bowl and mix
  3. Add both bowls into one and stir until blended
  4. Heat skillet to 350 degrees F
  5. Spray skillet with coconut oil or add 1/2 tablespoon solid coconut oil or liquified and coat evenly
  6. Pour 1/4 C scoops of batter into skillet and brown each side until fully cooked
  7. When pancakes are cooked, set aside. When ready to serve, top with additional raspberries and/or blueberries and lemon zest for appearance
  8. Drizzle with raw honey or maple syrup and serve

There’s nothing better on weekends than sleeping in {I  mean, I’m a mom to a toddler who is my alarm, but my mom is here visiting, so seeing the clock say 8 rather than 7 was a massive treat this morning…thanks, Grandma!} and waking up to something warm + yummy in your cup.

I went to bed way too late last night so traded my usual green tea + honey morning ritual for a little extra caffeine boost. From my kitchen to yours, hope you enjoy this filling, winter festive clean peppermint mocha.

HEALTHY PEPPERMINT MOCHA

Ingredients:

  • 1 cup organic coffee, brewed
  • 3/4 scoop chocolate Perfect Fit, or chocolate protein powder of choice. If you don’t want to use a protein powder, sub with 1 tablespoon cacao powder.
  • 1/2 tablespoon raw, local, organic honey
  • 2-3 drops organic peppermint extract
  • 1/2 teaspoon pure, organic vanilla extract
  • 1/2 tablespoon cacao powder
  • 1 teaspoon Chocolate Glazed Donut Flavor God seasoning
  • 2 tablespoons organic, unsweetened coconut milk

Directions:

  1. Add all ingredients in a mug + stir together until smooth
  2. Serve & enjoy warm or freeze coconut milk in ice cube trays. Add cubes to mocha & enjoy cold. Or add cubes and coffee mixture to blender and blend until frosty!

I love Sundays because they mean the local Leucadia Farmer’s Market is happening, and I can stock my fridge with farm-to-table items galore. I love farmer’s markets because I enjoy shopping small + local, organic, and supporting local farmers and family-run businesses. Plus, the stands are always reasonably priced, and can save you a ton on groceries {especially overpriced, organic products found in grocery stores}.

My neighbors and I walked to the market today, so not only did we score awesome finds, but we also enjoyed the beautiful weather, sunshine, and snuck in a nice long + peaceful afternoon exercise.

My world was changed today when I tried Bitchin’ Sauce’s new flavor, Bombay, which to me, is a curry-resembling Indian-inspired spread.

Why do I love this bitchin’ sauce so much?! 

  1. It’s made in Carlsbad
  2. The clean, simple ingredients:
    • Bombay Bitchin’ Sauce: Water, Almonds, Grapeseed Oil, Lemon Juice, Nutritional Yeast, Bragg Liquid Aminos (soy protein), Garlic, Spices, Sea Salt.
  3. The taste, the flavors, the texture….the…everything.about.it

I was a bit stumped on what to make for dinner tonight, because other than my farmer’s market finds, I’m rather low on groceries, and need to get my life together in that department.

Where my fellow mamas at who can vouch how horrible it is to grocery shop with a two year old?! I mean…it’s amazing…like a roller coaster of playing chase-me-down-the aisles-me-I’ve-escaped-from-the-cart, or oops! Let’s play catch while I throw all the items out. I really could go on and on about shopping with a cray cray toddler boy {like how you end up feeding them half of what you buy for their lunch boxes and snacks because they must have it…now. and you let them because it buys you 3-4 minutes.

Anyway, I opened my pantry, my freezer, my bag of market items, and looked around my fridge for some inspiration, and boom….

Chicken {or Veggie} Curry Lettuce Wraps

Ingredients:

  • 1-2 breasts of organic chicken, marinaded Greek-style or cooked with clean seasoning of choice, chopped. If choosing to make this veggie/vegan, leave out, or replace with any meatless meat of your liking
  • 1 organic bell pepper, any color, chopped
  • 1 organic, cage-free egg, fried {seasoned with garlic + onion powder or Everything Flavor God}
  • 1 sweet potato or yam, baked and chopped
  • 1 cup shelled edamame, steamed
  • 2 tablespoons Bombay Bitchin’ Sauce
  • Organic butter lettuce leaves, washed and dried

Directions:

  1. Cook chicken and chop up into small bite-sized pieces. I pan-fry with coconut oil, vinegar, and spices // marinade ahead of time // use leftovers // or bake. At the same time,
  2. Cook sweet potato {I peel, cut it into small cubes, and bake it at 425 for 20 minutes}
  3. Steam edamame and set aside
  4. Chop bell pepper and sauté until al-dente, set aside
  5. Fry egg how you like it
  6. In a bowl, combine sweet potato, egg, edamame, chicken, bell pepper, and add Bombay Bitchin’ Sauce
  7. Lightly toss everything together
  8. Scoop into butter lettuce leaves {however many you want; I use three for three lettuce wraps}
  9. Serve and Enjoy!

It doesn’t really matter where exactly  you pull your inspiration from, as long as you have something that gets you in the groove of a creative spirit, happy soul, or puts that extra oomph in your step.

With Christmas being over and the prospects of 2016 right around the corner, I’ve been doing a lot of visualizing (a key to success!), journaling, and goal setting/day dreaming. Last night I sketched for the first time in years, I think. Becoming a mom really put a lot of my own personal hobbies on the back burner. I remember right when my friends set me up on dating apps a while ago, one of the first questions people ask you is “What do you do for fun?” Like shit. What? Fun? Hi, I have a two year old and think I lost all my hobbies. After the 12387934 person asking me that I decided I had enough of speaking in past tense.

I know in my heart and soul I’m always a mama first, and that it is OKAY (like way more than okay) to do things for myself again. After all, it’s been years since I feel like I’ve truly followed my own dreams (outside of work) and dove into my favorite hobbies + things to do. So the old response of “Welllll, I used toooooo…._______”. NO. NO. NO. No mas.

So what do I like to do? I like to play volleyball, paint, be around people who inspire me, hike, grab dinner+drinks with friends, host get-togethers, teach people recipes, cook, make things, try new classes, blog, run Seashells and Sit Ups, design fitness tanks, explore and go on new adventures, spend time with Tanny, be a good mom, a good person, and a good friend.

No matter what you’ve been through, where you’ve been, what path you’re currently walking down, what you’re proud of, or what you hope to improve…one thing that’s for certain is that everyone always wants to start a fresh year with positivity, change, and improvement, in some form or another.

That being said, here are 12 of my favorite tips to kick off the new year with a steady heart, mind, and routine.

12 Tips to Kick off the New Year with a Steady Heart, Mind, + Routine

1) Find your vibes

For me, I don’t start anything (hardly) without music. Music speaks to me and fills my entire being, instantly creating a mood and a memory. When I’m blogging, working, or journaling, one of my favorite playlists comes from Pandora’s “Chill Vibes” station. Some of my favorite inspirational projects or deadlines are met thanks to the calm yet upbeat nature of this station (and how I’ve crafted it based on thumbs up and down, of course). Being a huge ‘vibey’ + lyric lover, I have a handful of other stations and artists that are my other go-tos in other scenarios, but every station has a place and a mood. Since this post is about nourishing the soul and a few of my top tips to do so leading into the new year, try playing something relaxing and maybe a little bit funky to get into spirit-hugging, goal conquering vibes.

2) Find your tribe.

Surround yourself with those that lift you higher, those that inspire you, those that make you a better person, those that push you, and those who are or have always been there for you. Make new friends, spike up a conversation with a stranger, do something new with someone new. Cherish old friendships, and consider reaching out to someone you miss. Life gets busy and it gets a little too easy to sometimes neglect those that mean the most to us. Build a friend-family, your safety net, your circle, your tribe. There’s nothing more comforting to have a solid group of friends who you know would, and will, be there for you – no matter what. Hold on tight to those who mean the most to you, and don’t let them go. 

3) Feel pretty from the inside out 

Dial in your nutrition. Do some personal research on some of your favorite foods and try to make them healthier. Make a plan of how you want to tackle clean(ish) eating and make it attainable, rather than sudden, where you’ll get burnt out and give up. Start experimenting with a couple new recipes a week and see how that goes. Changing your diet can be overwhelming. But it doesn’t have to be complicated. and it doesn’t have to lack flavor, be more expensive, or take up a ton of time, either.

TIP: Make it a goal to clean out your fridge and pantry this weekend. Get rid of all the gross things that have been sitting there too long, rotting and going stale, or that are your weakness. I’m a firm believer in cheat meals and indulging, but definitely overdo it when there are too many temptations around. Get organized and get clean – literally and figuratively in your eating habits.

4) Start a journal

Let me start this off by saying I know, I know, I know…you have no spare time. I get it; I’m a single mom to a toddler and barely have time to make dinner, or eat it. Or brush my hair. Or shave my legs. So journaling?! Really?! REALLY.

We all spend WAY too much time plugged in – on the computer (sitting here now while also texting from my MAC; GUILTYYYY), on our phones, on our tablets…we live in an effective and efficient world filled with technology that makes our lives easier, but also more complex. These little gadgets steal our time and our souls.

How many of you sit in one given hour habitually switching from Instagram/Twitter/Facebook, email, Pinterest, Snapchat, etc., etc., etc…..#raiseyourhand, I know you do. Sure, the mindlessness is nice, but hours go by and it’s like WTF did I just do for an hour?! Nothing. Literally. You. Did. Nothing. For an hour. Maybe even two…Maybe you found some inspiration, but maybe you feel a little shitty comparing yourself and your life to someone else’s “social media life;” so STOP IT. Right MEOW. Pick up or order a new journal and dedicate a few minutes an evening to unplug, be mindful, and just….be.

My friend John recommended journaling & reading at least ten pages from a book each evening before bed, and I’m kind of in love with these new habits. When journaling, it doesn’t have to be totally structured. Write, draw, scribble, visualize…anything. Just unwind, breathe, be mindful, and turn off the screen each evening. There’s a lot of really neat journals out there that channel self-reflection, inspiration, and mindfulness. John recommends The Five Minute Journal, and I just ordered Start Where you Are: A Journal for Self-Exploration and The 52 Lists Project: A Year of Weekly Journaling Inspiration. I don’t think I’ve ever been this geeky-excited for a journal in…ever. I’ll be sure to follow up with what I think of them soon! It’s so vital for our mind to channel our inner zen – your inner YOU. Which leads into my next tip…

5) Unplug

I know I touched on this above, but seriously, UNPLUG. After you finish reading this, of course 😉 Step away from the computer, your phone, that tablet…and that watch. Yes, you heard me. I know your tricks and know those fancy-schmancy smart watches can rule your life now too buzzing away all day like a parole bracelet. So basically, get naked and grab a book and your journal and crawl into bed. Dedicate a space OUTSIDE of your bedroom to leave all your techy-gems so you’re not tempted to repeat that social media trap ten more times before bed. You can do it. I believe in you. Try it — you’ll feel so at peace. Whatever you think you’re missing, you’re not. Pinky promise.

6) Drink more water

I’ll be the first to admit, I totally suck at this. But have been making a conscious effort to drink more water throughout the day. I have plenty of cute water bottles and fruit to infuse tap water with, but for some reason, I’m just not the best water drinker. So let’s do this together; make it a goal to stay hydrated throughout the day. Your skin, body and mood will thank you. Plus, drinking water helps you burn fat. So if nothing else tantalizes you to drink more water, that should, #amIright

7) Eat a Cheeseburger, Beer, and Piece of Cake before Bed

Nothing speaks to the soul or gives you something to look forward to quite like an adventure. Especially if it’s to somewhere new, or in the great outdoors. Nature grounds us, travel ignites us. Plan a trip with friends, a significant other, your kids…anyone, anywhere. It doesn’t have to cost an arm and a leg, either. Get creative. Quite often, there are a ton of fun things to do right in your own city, or within driving distance, which makes a great stay cation or day trip. Browse Pinterest and travel sites to get inspired, and get planning!

8) Make a vision board

The idea behind this is that when you surround yourself with positive images of who you want to become, what you want to have, where you want to live and the things you are grateful for, your life changes to match those images and those desires. The law of attraction in essence! When we express gratitude, we bring more into our lives to be thankful for. Although it may seem otherwise at times, we all have many things to be grateful for. I’m a firm believer in vision boards. A recruiter from Marriott came to my college when I was a freshman and handed me her business card. I kept it pinned on my bulletin board all four years, and when I was a senior, she recruited me out of my graduating class and placed me in Activites with Marriott Vacation Club in Park City, Utah. I didn’t even realize I had her card still until I cleaned out my room one day before graduation and found it above my desk. Now if that isn’t the universe speaking, I don’t know what is.

9) Print out some photos

One of my best friends, Krystal, asked me which photo from my Noble Andrews photoshoot made me feel most beautiful. I said I wasn’t sure because there was such a variety of styles we went with for different genres (fitness, beachy-fun/mom vibes, oh hey, I’m a MILF) – I mean, come on, those are all polar opposites. But then she surprised me with this photo on a canvas, and I about died. I don’t think I’ve ever felt more beautiful than everything this picture shows and embodies. Such strength, empowerment, and I truly felt beautiful on the inside in this moment watching the sunset over the cliffs, and so pretty on the outside with Savannah from A Toast of Beauty pampering my hair and makeup. Point of that story – having this picture printed in my bedroom reminds me of how far I’ve come this past year, what great friends I have, and what beauty feels like in the heart.

I also finally just filled blank frames with printed photos of my friends and family in my house, and now I can’t wait to relax in my living room and have them all right there with me, when they’re all miles away in reality. It makes my house a home, and there’s just something comforting about photos surrounding you.

10) Try a new hobby

 

Enroll in a class, course, or experience in something you’ve always wanted to do. Maybe it’s a sport, a wellness course, a cooking class, trade school, music lesson, art lesson, bartending course….anything. What’s something you’ve always wanted to try or do but haven’t yet? Do that. Jump on Groupon and there’s probably something right there waiting for you! Que ‘Right Here Waiting’ by Richard Marx…that’s your new hobby serenading you. Wherever you go, whatever you do, it will be right here waiting for you…don’t break its heart.

11) Create a fitness routine

This sounds like such a “DUH,” but it’s an essential to building healthy habits. Pair building a fitness routine with all the other tips listed in this post and you will shine bright like a diamond. And glow like a star. And radiate like the sun. 😉

Jumping into workouts doesn’t have to be intimidating and hard. Start small and ALWAYS listen to your body. If a plan seems scary, challenge yourself. But if you need to scale back, DO IT. This is your life, your body. Honor it.

For example, this is one of my WODs (workout of the day) listed above. If you don’t have time or space to go run a mile, skip that part and do the strength training. If you’re low on energy or time, do it once. If time isn’t an issue, repeat it 4 times. Use that kind of thinking when browsing fitness routines, and you’ll never get intimidated or burned out.

I first started my fitness habits through Tone It Up, and am also ecstatic their Self + TIU Challenge is right around the corner. I plan to pair bits and pieces of Kayla Itsines’ Guide + the TIU/Self challenge + my own WODs + Super Sister Bikini Challenge this winter to kick off my new year with a bang – a BANGin bod.

12) At least once a month say yes to something you’d normally say no to

Want to grab a drink? Yes.

Want to grab a coffee? Yes.

Want to go on an adventure? Yes.

Want to get the kids together for a play date? Yes.

Want to go for a run? Yes.

Want to try this new fitness studio with me? Yes.

Want to try this dish you’ve never had? Yes.

Want to go to a concert? Yes.

Want to _______________________. YES YES YES.

Use your discretion with this one, obviously, but the point is…try new things. and don’t feel bad about it. Go out and do something the next time you really want to be anti-social. Try a new restaurant instead of your favorite. Take a new road home instead of your usual route. Try a new grocery store that will give you anxiety not knowing where anything is. TRY SOMETHING NEW you normally wouldn’t. Say YES to getting out of your comfort zone.

May you always be as strong as what’s inside your cup

I’t’s been one of those Mondays…

A sick toddler meant a sleepless Sunday night, a morning that came way too early, and a wholeeeee ‘lotta chaos in our house this morning, which has lingered into this evening. Having a split family and co-parenting is always a challenge dealing with transitions between my house and T’s adventures with his dad. Add Christmas and the excitement of Santa, elves, and new pressies on top of a little guy who’s not feeling well, and that’s pretty much a bad behavior, confused-attention-seeking-bundle-of -two-year-old munchkin.

That being said, I was in desperate need of a pick-me-up this morning, and coffee just sounded cozy. I’m a tea girl through and through, but have been drinking a ton of green tea all week, so needed a change. Not being able to leave the house with a sick nugget, and trying not to order a sugar-loaded fancy schmancy froo-froo coffee shop concoction, I decided to attempt to make a coffee I actually liked. I don’t really even like the taste of coffee; that’s why I prefer tea. But when I do order it, I like crazy flavors (always loaded with thick sugary syrup and caramel and deliciousness), so was trying to be good and make a clean, yet yummy #thisdoesntreallytastelikecoffeecoffee coffee. youfeelme?!

BOOM. It was a total success. If you’re not a huge coffee fanatic like I am, but want to try an experiment because you’re in need of a change to your tea game, in need of an extra caffeine boost, or just want to try something different as a new year’s resolution, I hope you find your day filled with a little cup-o-joy from this cup-o-Shelley. Or better yet, if you like coffee, you’re the true critic then, and I hope you like this 😉

 

Morning Mantra Cup-o-Shelley

Ingredients:

  • 1 cup (approx) organic medium roasted coffee (I use a K-cup)
  • 1/2-1 tablespoon organic ground cinnamon
  • 1 teaspoon organic, pure vanilla extract
  • 2 drops organic, pure peppermint extract
  • 1/8 cup unsweetened coconut milk (use less or more depending on your “coffee taste” preference)
  • 1 tablespoon raw, local honey

Directions:

  1. Brew coffee and pour into mug of choice
  2. Add remaining ingredients to coffee mug
  3. Stir & enjoy!

 

Double dog dare you to pair this with my clean coffee cake recipe. You’ll be wandering around with pixie dust under your toes saying…

OH HEY, MONDAY (or insert day of choice).

Easiest Crock Pot Roast Ever

Okay, I’m apologizing in advance for breaking one of my cardinal rules – a food post without a picture… I always have goals of blogging 12037 of my recipes, and can’t seem to find the time for all of them with my toddler tugging at my hair, arms, legs, and soul. By the time I do find a quiet moment to finally blog them, my notepad with the recipe disappears, and I can’t remember the measurements or ingredients used since I just grab things from my pantry and experiment. Or in this case, we already ate all the meat. I don’t even like leftovers, so that’s saying something. It was that good.

That being said, yesterday was the first Christmas I’ve spent away from home (besides last year flying back from the east coast on Christmas itself and driving all night until like 4am on the 26th, finally pulling into my parents’ house). Anyway, the point of that was that this was the first Christmas I was responsible for dinner, and I refused to be my usual basic bitch culinary self cooking chicken and a veggie being healthy and boring aka toddler-quick-just-eat-something style meal.

So I went to the grocery store and explored the red meat section, clearly clueless. #WhereTheEFFdoIevenstart was planted all over my face; so much so that the butcher asked if he could help me find something. I always get awkwardly shy when asking for help, so I quickly said something (probably way too fast and with giggles, because that’s what I do when I feel shy and awkward) like “umm, uh, no, haha, I mean, thanks, but no thanks.” Typical. Shelley. Then as I scanned the almost empty row seeing only like 4 cuts left — all HUGEEE, by the way…like bigger than my legs, and priced at over $100. He looked at me again and said, “Sure I can’t help you find something? I know it’s slim-pickings!” I shyly said, “Actually, can you recommend a cut of meat for 4 people?” To which he smiled and replied, “Of course! A chuck roast! I’ll go cut one for you right now in the back.” Less than one second later he vanished into the back and reappeared with a custom cut for me.

Welp, asking for help wasn’t that hard, and he was a total gem. Not that you’ll ever read this, but hi, Ralph’s (Carlsbad off Avenida Encinas) butcher…you knew I needed help, and thanks for staying close-by and jumping to my clearly-I’m-single-and-lack-any-sort-of-red-meat-knowledge rescue.

Boom…a 2 pound chuck roast was coming home with me, to my crockpot. and it was only $15. The real toss up here, was that after standing in a half hour grocery line, I realized I forgot any sort of marinade for it. Shiiiiiit.

I got home and opened my pantry and had…like, nothing. What I did find, however, was chicken broth, Trader Joe’s gravy, an assortment of Flavor God seasonings, and crushed garlic. Soooo, guess that’s what I’d be working with. Clearly, those ingredients would provide some sort of flavor, and would have to do the job. and they did! So, if you’re in need of a quick seasoning mix to toss in with a roast you plan to cook in the crock-pot, try this 🙂

5ish-Ingredient Crock Pot Chuck Roast

Ingredients:

  • 2 pound chuck roast, extra lean (obviously – so not counting this as an ingredient)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon crushed garlic or head of garlic cloves, poked into meat
  • 1/2 onion, chopped
  • 1 can chicken or beef broth
  • 1-2 cups gravy

After the chuck roast was fully cooked, I cut chunks for four servings and sprinkled both sides with an assortment of Flavor God’s Ranch + Everything seasonings and onion powder. Was the perfect addition. You can also choose to lightly and quickly sear the individual chunks at this time + that assortment of extra seasonings if you wish for a nicely flavored outer coating.

Directions:

  1. Add all ingredients to a crock pot
  2. Cook on high for 6-8 hours, lowering to low the last 2 hours if choosing to cook for 8. Test with meat thermometer to make sure meat is fully cooked before removing.
  3. If you wish, lightly sear cut chunks with additional seasoning (listed above)
  4. Serve and enjoy!

 

*Leftovers idea –

Today my friend and her husband came over to help me get rid of Christmas dinner leftovers. We shredded the rest of the chuck roast and covered it in BBQ sauce (try my clean, finger-licking-good homemade BBQ sauce recipe here), and made sandwiches and salads. So easy and so yummy!

Extra tip – Add a tablespoon of water when microwaving the leftover meat to keep it from drying out.

 

Candy Cane Smoothie

Ho Ho Ho and Merry Christmas! Wishing everyone a beautiful, festive holiday! If you’ll be eating cookies all day like me, try this Candy Cane shake for a clean eating option to kick off your morning, or enjoy as a late night healthy treat (with a cookie or two – sure, why not…it’s Christmas after all!!) 

Candy Cane Smoothie

  

Ingredients:

  • 1 cup unsweetened coconut milk
  • 5 ice cubes or frozen coconut milk cubes
  • 1-2 drops peppermint extract
  • 1/4 frozen banana
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon honey, agave, or maple syrup, 2 dates, or 1/2 tablespoon coconut sugar
  • 1/2 cup Greek yogurt or 1/2 scoop vanilla protein powder of choice [ie: @perfectfit or @manitobaharvest ]


Optional: make it chocolatey by adding 1 tablespoon cacao powder, use chocolate protein powder, or add 1 tablespoon dark chocolate chunks. Throw in a handful of spinach for some extra iron and you won’t even taste it!


Directions:

  • Add everything into blender and enjoy! Freeze for a bit for a more frozen consistency.

Spicy BBQ Burgs

Sometimes you just crave a burger…and BBQ sauce…and big, crispy onion rings and cheddar cheese. I had a couple huge cheat days this week, I mean month, so decided to hold the deep fried deliciousness and cheese and go for a healthier BBQ burger alternative. If you like a kick and like a good burger, this one’s for you! 

  
Bunless BBQ Burgs 

Clearly you can still add a bun to these if you desire! 

Ingredients:

  • 1lb. Lean ground turkey or chicken
  • 5 green onions, chopped
  • 1/2 onion, chopped and sautéed 
  • 1 teaspoon chopped garlic
  • 1/2 tablespoon onion powder
  • Few shakes of pepper, paprika, Felix powder, salt, or hamburger seasoning
  • 3 shakes Ranch Flavor God seasoning
  • 1/4 cup spicy BBQ sauce or my clean BBQ sauce + a teaspoon of Sriracha 
  • 1 egg (optional to help bind)

Directions:

  • Add all ingredients to a large bowl & mix by hand 
  • Shape into burger patties
  • Add to a warm skillet or grill and cook about 4 minutes per side, flipping until no longer pink & meets recommended cooking temperatures 
  • Remove & serve!
