I love Sundays because they mean the local Leucadia Farmer’s Market is happening, and I can stock my fridge with farm-to-table items galore. I love farmer’s markets because I enjoy shopping small + local, organic, and supporting local farmers and family-run businesses. Plus, the stands are always reasonably priced, and can save you a ton on groceries {especially overpriced, organic products found in grocery stores}.
My neighbors and I walked to the market today, so not only did we score awesome finds, but we also enjoyed the beautiful weather, sunshine, and snuck in a nice long + peaceful afternoon exercise.
My world was changed today when I tried Bitchin’ Sauce’s new flavor, Bombay, which to me, is a curry-resembling Indian-inspired spread.
Why do I love this bitchin’ sauce so much?!
- It’s made in Carlsbad
- The clean, simple ingredients:
- Bombay Bitchin’ Sauce: Water, Almonds, Grapeseed Oil, Lemon Juice, Nutritional Yeast, Bragg Liquid Aminos (soy protein), Garlic, Spices, Sea Salt.
- The taste, the flavors, the texture….the…everything.about.it
I was a bit stumped on what to make for dinner tonight, because other than my farmer’s market finds, I’m rather low on groceries, and need to get my life together in that department.
Where my fellow mamas at who can vouch how horrible it is to grocery shop with a two year old?! I mean…it’s amazing…like a roller coaster of playing chase-me-down-the aisles-me-I’ve-escaped-from-the-cart, or oops! Let’s play catch while I throw all the items out. I really could go on and on about shopping with a cray cray toddler boy {like how you end up feeding them half of what you buy for their lunch boxes and snacks because they must have it…now. and you let them because it buys you 3-4 minutes.
Anyway, I opened my pantry, my freezer, my bag of market items, and looked around my fridge for some inspiration, and boom….
Chicken {or Veggie} Curry Lettuce Wraps
Ingredients:
- 1-2 breasts of organic chicken, marinaded Greek-style or cooked with clean seasoning of choice, chopped. If choosing to make this veggie/vegan, leave out, or replace with any meatless meat of your liking
- 1 organic bell pepper, any color, chopped
- 1 organic, cage-free egg, fried {seasoned with garlic + onion powder or Everything Flavor God}
- 1 sweet potato or yam, baked and chopped
- 1 cup shelled edamame, steamed
- 2 tablespoons Bombay Bitchin’ Sauce
- Organic butter lettuce leaves, washed and dried
Directions:
- Cook chicken and chop up into small bite-sized pieces. I pan-fry with coconut oil, vinegar, and spices // marinade ahead of time // use leftovers // or bake. At the same time,
- Cook sweet potato {I peel, cut it into small cubes, and bake it at 425 for 20 minutes}
- Steam edamame and set aside
- Chop bell pepper and sauté until al-dente, set aside
- Fry egg how you like it
- In a bowl, combine sweet potato, egg, edamame, chicken, bell pepper, and add Bombay Bitchin’ Sauce
- Lightly toss everything together
- Scoop into butter lettuce leaves {however many you want; I use three for three lettuce wraps}
- Serve and Enjoy!
