Travel Friendly WOD

This weekend I’m home in my hometown visiting my family. We haven’t all been together since last Thanksgiving, so nearly a year! Seems unbelievable how fast time flies now that we’ve all flown the coop. And it’s just my sister, mom, and dad – our little party of 4. Crazy the four of us go that long…Anyway, back to this post 😉

Flying yesterday and a big cheat meal last night led me to wake up this morning feeling like a lazy slug. So I had two options: be a lazy slug all day or get up and get moving! I went with option 2…

My phone was dead so I couldn’t do a TIU video, so I made up a WOD to do in our front yard, with runs down the street.

For this workout, complete the moves listed in the picture, and complete what’s listed TWO times through. End with a one mile cool down jog or wog to bring your heart rate back down. This workout should be completed in under 30 minutes 😉

Camping WOD

This week we booked a fun two-night staycation at a local campground in Cardiff. It’s one of my favorite North County beach towns to go for a beach wog [my term for a walk/jog], and our favorite place to bring our RV for a little family “getaway”.

Not wanting to bring any workout equipment (ie: weights, a mat, etc.) my sister and I got creative to brainstorm a workout that could be done right at our campsite.

When you’re camping, less is more. Usually sites all have picnic tables, which are perfect for a full body workout!!

With that, here’s my version of a campsite friendly WOD using just yourself and a picnic table! (Be sure to use a picnic table that is in sturdy condition, on a flat, level surface, and can support your body weight.)

TIU Secret Sister Holiday Motivational Mail Exchange

After our Frisky Fall mass #TIUMotivationalMail exchange was such a hit and success (minus a few glitches, of course!), there was tons of interest in another exchange. I was planning to do one each official 8-week challenge, but who can resist a gift exchange during the holidays?! There’s nothing more fun than being little secret elves for Santa!

 

Due to some complications during our Frisky Fall exchange, please read the following rules & guidelines before signing up to participate:

Stuffed Peppers: Italian & Mexican Style

I LOVE stuffed peppers. My sister introduced them to me a few years ago, and I love how quick, easy, and how minimalistic their prep time is.

I always see recipes for Mexican-style stuffed peppers, and love those because they are so delish and so easy, but I also love making them Italian-style! I know the #tiuplan just released a stuffed pepper recipe with a Mexican-y twist, but I haven’t looked at the full recipe yet, because I’m kind of a huge fan of the way I already make them haha.

For my Mexican stuffed peppers I use the following ingredients (P.S. – I’m a mom to a crazy toddler so used canned veggies to make it even easier on myself; you can use all fresh if you have more prep time available):

Ingredients:

  • 1 lb. Cooked, organic, 99% lean ground turkey (you could also use ground pork, chicken, ground beef, or sausage)
  • Organic, unsalted black beans – [1 can]
  • Organic chopped tomatoes – [1 can]
  • Organic corn kernels – [1 can]
  • Sliced black olives – [1 can]
  • Organic, chopped green chilies – [1 can]
  • 4 organic bell peppers, sliced in half
  • 1 Organic chopped onion
  • 1/2-1 cup cooked quinoa
  • Optional: shredded organic Mexican-style cheese sprinkled on top

Directions:

  1. Pre-heat oven or toaster oven to 350 degrees F & line baking sheet with foil (for easier clean up)
  2. Cook ground turkey in large, non-stick flying pan until cooked all the way through
  3. Add chopped onion to fully cooked turkey & cook until onions are browned
  4. Drain all canned veggies
  5. Cook quinoa (I use organic, frozen, steam able quinoa that’s ready in 5 minutes!)
  6. Wash & slice bell peppers in half, removing all seeds and cut tops off
  7. When turkey is fully cooked & onions are sautéed, add all canned ingredients & cooked quinoa in same frying pan
  8. Mix all ingredients in pan together
  9. Scoop out about 1/2 cup of frying pan filling mixture into each bell pepper. I usually fill mine to be kind of mound-shaped
  10. Optional: sprinkle cheese on top of each pepper
  11. Add each stuffed pepper to lined baking sheet & place in pre-heated oven
  12. Bake for approx 30 mins.
  13. Let cool, serve, and enjoy!

Now let’s head over to Italy…

I just made these last night and am drooling over getting through writing this so I can have them as leftovers for lunch…you can also make all these ingredients from scratch (i.e.: tomato sauce) & use all fresh veggies, but again, I have a 14 month old and a husband who travels for work, so do the best I can to cook & eat period!

Ingredients:

  • 4 organic bell peppers, washed + sliced in half with all seeds and tops/stems removed
  • 1 lb. ground turkey (you could also use ground pork, chicken, ground beef, or sausage)
  • 1 can organic tomato sauce (my favorite is always garlic & herb).
  • 1 organic zucchini, chopped
  • 1 chopped onion or 1/2 cup frozen chopped onion
  • 1 cup frozen spinach or 2 cups fresh spinach
  • 3 chopped garlic cloves or 2 tsp pre-chopped garlic or garlic paste
  • 1-3 shakes red pepper
  • t tsp pepper
  • 1/2-1 cup cooked quinoa
  • 1/2 cup shredded carrots
  • 1 tablespoon onion & herb salt-free Mrs. Dash seasoning
  • Optional: shredded Italian four-cheese blend

Directions:

  1. Pre-heat oven or toaster oven to 350 degrees
  2. Mom-approved step: Line baking sheet with foil for easy clean-up
  3. Add ground turkey to large non-stick frying pan. Add Mrs. Dash, pepper, and garlic while still raw. Cook with seasoning until fully cooked. Add as much seasoning as you wish to taste.
  4. In another frying pan, sauté onions, carrots, spinach, and zucchini. I add extra garlic and seasoning to these too! (If you don’t want to get another frying pan dirty, I suggest sautéing these in the large frying pan FIRST, then place in a bowl on the side while you cook the turkey, then add all ingredients together once turkey is fully cooked).
  5. Cook quinoa (I use organic, frozen, steam able quinoa that’s ready in 5 minutes!)
  6. Add veggies + quinoa to the ground turkey in the large frying pan.
  7. Pour can of sauce (or less depending on how much sauce you like; you don’t want the mix runny, but you don’t want it super dry either) & mix all ingredients together
  8. Scoop about 1/2 cup or more of tomato sauce + veggie + meat blend into each 1/2 sliced peppers (like serving open-faced). I like mine to make a mound on top.
  9. Optional: add shredded cheese as a garnish on top
  10. Bake at 350 for about 30 mins., serve, and enjoy!

OPTIONAL CROCK POT ADAPTION:

You can also make either of these babies in the crock pot! Just pre-cook the ground turkey first, mix all ingredients (except bell peppers) together. Add “stuffing” to bell peppers and place each half in the crockpot facing up. Cook on low for 4-6 hours. You just can’t fit as many this way. You could also leave peppers whole, cut off tops, and stuff your crockpot with them that way to fit more. YUM!

Surfing Madonna 5k/10k

Leaving footprints in the sand…

Yesterday was one of the best fitness-related afternoons I’ve had since we moved here in February. It was a BEAUTIFUL day with temps in the high 70s, a perfect ocean breeze, and time for the Surfing Madonna Run!

The race was held on Moonlight Beach in Downtown Encinitas at low tide (approx 2:20pm), and proceeds went toward the Surfing Madonna Foundation to save the ocean! Last year they were able to donate $50,000 back to the community to help “save the ocean.” This year their goal was to double that amazing number!

I haven’t signed up for a 5k since a Turkey Trot a couple years ago, so I was anxious & excited, and curious to see how long I could survive 😉 My TIU sista and bestie since high school, Rachel, joined Tanner & I. She’s been dubbed my local #fitfriend because I somehow convince her to partake in all my new activities here, like our bootcamp class, TIU, and random things around town. I’m so thankful she lives here to join me!! I’ve been using the Couch to 5k app for iPhone to interval train the past month. I’ve gotten up from only being able to run 30 second intervals to 8 minutes straight! I completely amazed myself in my progress the past 4 weeks. We did SO WELL for a couple of “non-runners.” We ran the first 8 minutes straight, and reached the turn-around point before we knew it! Not to mention I was pushing Tanner in our Bob jogging stroller the entire time, so my casual lil’ 5k turned into a whole body workout. Not sure if you’ve ever pushed a stroller through the sand, but lemmetellyou….woah. The packed sand isn’t as big of a deal, but the soft sand….hello, entire body strength!

We got tricked and thought the turn-around point was halfway, so you could imagine our surprise when it only ended up being about 1/4 of the way through. We passed the finish line and saw we had about another 1/2 mile to go, and were definitely feeling it!! I got a little fire under my butt with the end almost in sight, and stepped up my running intervals until I made it to the end. I was SO CLOSE until the finish line was UPHILL in SOFT SAND. Ahhh what?!?! I was so bummed because I had to walk and push the stroller up with all my might. It took me a good whole 2-3 minutes just to make it up the hill until a guy behind me said “oh my gosh, mama, you need some help!” and helped me push it the final 5 feet or so. Rachie crossed the finish line about a minute later and WE DID IT!

To a runner, our time of 42 minutes would have been despicable, but to a couple of average-joe’s who just started working out the past few months, we were pretty happy. We finished in top 44% for women and top 41% overall! I’d say knowing we did better than half the other people out there, is an accomplishment in itself. We only took a few walk breaks, and ran the rest, which is huge considering I used to barely even be able to walk to the stop signs in our neighborhood post-c-section.

I’m excited to see my time improve for the Encinitas Turkey Trot on Thanksgiving!

My TIU Transformation

I’ve recently been getting a lot of compliments from friends and family recognizing my weight loss and muscle toning, and they’ve been interested in my “secret”. With positive feedback, always comes negative, however. (grrr) The good-‘ol backhanded complements all of a sudden keep flowing in like pesty flies…

  • “Ummm, do you eat?”
  • “You’re a t.w.i.g….”
  • “Please don’t lose anymore weight.”

So let’s get a fly swatter out and clear the air right meow….

  1. Yes, I eat; I actually eat 5-6 times a day.
  2. I’d like to think I’m more like a blossoming sunflower; a cute little stem with a sun-shiny mane, thankyouverymuch
  3. My transformation is no longer about the number on the scale. I could care less what it says anymore because I am HAPPY, actually ECSTATIC, with my progress. I never in a million years imagined I could EVER reach my high school weight again, in such a healthy, positive way. Before I got pregnant, I never really had to watch what I ate, or even workout much; or had to do anything, really, to maintain my figure. All thanks to a combination of good genes and an athletic childhood & adulthood. I’m not on a diet. I definitely do not, or have ever, had an eating disorder. I’m not overly exercising.  I’m just being me – a healthier, happier, more positive, ME.

I feel amazing on the inside.

I’ve never felt so HEALTHY. I literally feel amazing on the inside. Forget the outside, I’m a mom and have no time for that these days. But for the first time I actually really care about what’s going into my body. I care about making healthy choices when it comes to cooking, baking, or eating out. I’ve completely changed the way I cook, bake, and order at restaurants. What’s sugar? I use coconut sugar. What’s butter? I use coconut oil and unsweetened apple sauce. What’s enriched flour? I use whole wheat/spelt, garbanzo bean, quinoa, or brown rice flour. Sure, I have noooo problem indulging on rich, real, 100% bad for you chocolate cake, fro-yo, cookies, or other delicious baked treats or comfort cooking from time to time. But those have become fewer and further between, as I no longer crave them. They are my special occasion celebratory indulgences, rather than a weekly staple.

Don’t ever be too busy building a life you forget to look around and smell the roses.

So what do I do to live the lifestyle I live? I make it a goal to perform TIU videos at least 5 times a week. If I miss one because of a crazy day, I double up the next day. I always challenge myself to walk/wog/run 100 miles over an 8-week period. I set attainable goals. Start small and work your way up. If you have a list of 15 things you want to accomplish within the next month, pick your top 5 and focus on those. Once you hit those, move forward. If you set too many, too quickly, you’ll get way too overwhelmed and struggle to even reach one. I eat healthy. I try to stick to the motto “lean, clean, and green. Like I mentioned earlier, I eat 5-6 small meals a day. Breakfast, a mid-day snack, lunch, an early-evening snack, and dinner. If i don’t have a mid-evening snack and am up late, sometimes I have a healthy “dessert” like a piece of fruit, flavored greek yogurt, and/or a cup of herbal tea with raw, organic, local honey. Think I’m crazy? The first time I heard someone say a piece of fruit satisfied their sugar craving I thought they were a complete psychopathic nut job! I visualize. Make a vision board of where you want to be in life in the future; it can be anything from a cute outfit you want to buy, new recipes you want to try, hitting a milestone (buying a house, getting married, getting a new job, getting pregnant, etc.). But don’t forget about the present. Live in the now, enjoy this moment right here, right in front of you. Don’t ever be too busy building a life you forget to look around and smell the roses. BE YOU. RIGHT NOW. It’s never too late to be a better version of yourself. If you’re ready to commit to you, you can do this. The journey of a lifetime truly does begin with one.single.step. Jump, girl!
