Slow Cooker Teriyaki Pork Tenderloin – Takes the Salad Main Stage

Oh my gosh. I had the BEST salad last week for lunch. It came from leftovers from a teriyaki pork tenderloin I made in my crock pot the night before & a leftover veggie tray grab bag I had from hosting a mommy+baby pumpkin play-date the day before also. It was SO good, in fact, I need to shout from the top of a mountain top (or here) what was in it, so you can recreate it…

INGREDIENTS:

  • Leftover, organic, pulled teriyaki pork
  • Organic spinach
  • Chopped mango
  • Chopped pineapple
  • Chopped red bell pepper
  • Chopped celery
  • Chopped carrots
  • Chopped cherry tomato
  • Chopped broccoli
  • Chopped snap peas
  • Mango white vinegarette

DIRECTIONS:

  • Mix all ingredients in medium sized mixing bowl, toss, and enjoy!
