I absolutely LOVE my sister’s pineapple burgers I’ve featured here before, and tonight my ground turkey and crushed pineapples were calling my name.

Tanner has been super picky lately (hello, 19 month old who snuck up on me!) so it’s been crucial for me to disguise veggies in creative ways. Tonight was 17283738% a success! From my luckily toddler to you, I hope you love this yummy burger whether you’re feeding them to kiddos or just yourself!

The Aloha Burger

 

Ingredients:

  • One pound extra lean [99%] ground turkey, organic
  • 8 baby carrots or two carrots
  • 1-2 cups spinach
  • 2 tablespoons garlic, minced
  • 1/4 onion, chopped finely
  • 1-2 tablespoons Spicy Flavor God [mix in or sprinkle on top of burgers after making a few for your kids]
  • 1/2 can chopped pineapple
  • 1/4 cup teriyaki sauce

Directions:

  1. In a medium sized mixing bowl, add ground turkey
  2. In a blender, add spinach, pineapple, teriyaki & carrots. Blend together until well mixed
  3. Pour veggie mixture on top of ground turkey
  4. Add garlic, onion & Flavor God (leave out if making for kids or use their original seasoning blend)
  5. Mix together and form into patties
  6. Using a George Foreman, cook on high about 4 mins each side, or until fully cooked through.
  7. Serve bunless with sweet potato fries, atop salad, atop zoodles or sweet potato pasta; the possibilities are endless!

I’m a member of a few meetup groups, but my favorite experience thus far is my North County mom group, where I’ve formed incredible friendships with other San Diego mamas. Their support, love, and advice is incredible, and it feels comforting knowing I have such a wonderful group of women here for me and Tanner. I help organize play dates and come up with fun social activities for our group of moms and babies. The overall experience of being on meetup and being part of such a community has been priceless!

Because of my love for my mommy group and positive experience with meetup, with my most recent venture being healthy and fitness, I knew I wanted to start another group focusing on overall lifestyle, health, fitness, and fun social events for like-minded individuals in our area. I create Tone It Up social events for San Diego TIU girls, but wanted to expand to the greater San Diego area, focusing on North County, where most events will be planned and held.

I’ve taken Natalie’s bootcamp classes previously and she is incredibly knowledgeable in regards to functional movements and nutrition. She provides a wealth of knowledge, and I look forward to her classes like they’re the weekend!

With Tone it Up officially announcing that Bikini Series starts “April 13th at midnight” [I’m assuming that means April 12th at midnight/technically the 13th since that’s a Monday??] we wanted to time this ten-day boost to begin ten days prior to the first day of Bikini Series. That means we’re starting this BIKINI GLOW CHALLENGE this Friday, April 3rd!!!

Okay, seriously, anyone else chomping at the bit for Tone It Up’s Bikini Series 2015 to start?! I almost peed myself when Shelby told me they officially released the countdown…I have to admit I was really surprised it’s so early, because last year it was 8 weeks; 8 weeks out from the first day of summer. It began the last week of April, and today they just announced that we’re just over ONE WEEK away already! EEK! SO EXCITED! This is the exact kind of structure and self-love I need right now.

That being said, you know what time it is………BIKINI SERIES’ MILEAGE TRACKER TIME!

I can’t help myself; I’m an artsy fartsy soul who has to use my own creations for things like this. TIU always releases “official” trackers, but it fills my heart [and creative soul] making these, and I love sharing with my Instagram followers. When I made my Spring Break WOD this week using this background, I decided it was something I just HAD to stare at for longer than one workout. I actually want this pattern as bed sheets so I can stare at it everyday. Or a bikini. Or a tank. Or a pillow. Pretty much anything I can stare at over and over again. I’m obsessed. Reminds me of a vintage Hawaiian vacation, which I would love to be on right now 😉 So, with that, if you chose to, I hope you enjoy this little slice of Hawaiian paradise every time you check off a mile toward #100bysummer [or whatever the official Bikini Series mileage tracking hashtag ends up being; which I’ll be adding to the bottom of these and reuploading].

*Disclaimer – These are not official TIU #100bySummer mileage trackers. I share my own art every challenge, and have for the past year. These are simply what I will be using to track my miles throughout Bikini Series, and since last April, have always created more charts for other mileage groups upon request. Other TIU girls make their own designs & TIU makes their own with their logo & name; use whichever suits your personality, preferences, and lifestyle 🙂 

I love love love zoodles and they are my absolute favorite with a good meat sauce. I love topping them with my veggie meat sauce, but was looking for something a little different tonight. They ended up with a kick of spice, and whole lotta nice 😉

Ingredients:

  • One pound extra lean, organic ground turkey
  • One orange bell pepper
  • 3 garlic cloves, minced
  • 1 organic zucchini
  • 1 jar spicy red bell pepper spaghetti sauce
  • Flavor God Original Blend
  • 1/2 cup mixed peas & carrots
  • 1/4 onion, chopped

Directions:

  1. In a medium sized pan, brown turkey until cooked all the way though.
  2. Add chopped onion, 1 1/2 cloves minced garlic, and 1/2 tablespoon Flavor God to turkey and sauté until onions are browned.
  3. Add peas and carrots to turkey.
  4. Add marinara sauce to meat mixture and mix thoroughly. Set aside.
  5. Using a zoodle machine aka spiralizer, spiralize one zucchini into noodles. Or slice zucchini the shape of fettuccini noodles.
  6. In a pan, sauté chopped bell pepper and zucchini. Add 1 1/2 cloves of minced garlic and 1/2 tablespoon Flavor God. Cook until tender and browned.
  7. Add zoodles to plate and top with sauce.
  8. Sprinkle pamesan cheese on top & enjoy!

Wednesday means #wcw in the social media world, also known as Woman Crush Wednesday, and today it’s my honor to feature one of my fitness BFFs, Shelby, aka @shelbysfitlife on Insta! Many of you may know Shelby from the Tone It Up world, and the infamous host of the #squatchallenge last year. When I planned to release my fitness calendars around the holidays, I couldn’t wait to reach out to Shelby and see if she would tackle them with me, and take the Insta-fit-world by storm. Our first calendar completely blew through the roof with over 13,000 check-ins on Insta! #canwegetanamen – we can’t thank everyone enough for their continued love and support while we pursue our dreams in the health and fitness world.

It’s been an absolute pleasure and honor getting to know Shelby, and her friendship now means the world to me. In just a few months it feels like we’ve known each other forever, and still baffles me we “met” via the TIU Community + Instagram…technology is nuts! We’ve both been through so much the past year, and I feel like one of the luckiest girls in the world to have Shelby standing by me as a friend, challenge co-host, fit sis, soul sister, and TIU bestie for life! Chocolate Banana Pancakes

Que Jack Johnson’s “Banana Pancakes”, throw on a cute apron, and get mixing’ in the kitchen with this family favorite healthy pancake recipe.

I had ripe bananas & I’m not a huge fan of banana bread, so wanted to come up with something to get rid of them while sneaking nutrients into my new-found toddler’s picky eating habits. For my little guy I made a bunch of mini bite-sized cakes, and they were a huge hit!

CHOCOLATE BANANA PANCAKES

Ingredients:

  • 1 cup 100% whole wheat U.S. flour
  • 3 tablespoons 100% pure cocoa powder
  • 1/4 teaspoon baking soda
  • 1 organic egg
  • 2 tablespoons organic cottage cheese
  • 1 tablespoon milled, organic chia seeds
  • 1/2 ripe organic banana
  • 1/4 cup organic coconut milk
  • 1 1/2 tablespoons ground cinnamon
  • 1 tablespoon vanilla extract
  • 1/4 cup organic rolled oats
  • 4 tablespoons cup organic coconut sugar or 100% pure, organic maple syrup
  • Spray coconut oil
  • Optional toppings: all-natural nut butter, Greek yogurt, fruit, maple syrup, etc.
  • Electric skillet

Directions:

  1. Plug in electric skillet and heat to 350 degrees F
  2. In large mixing bowl, mash banana with coconut milk and egg [I use a potato masher]
  3. Add all remaining ingredients and mix thoroughly until batter reaches a semi-pourable consistency. If batter is on the dry side, add a little more coconut milk or another egg
  4. Spray skillet with coconut oil
  5. Use a small measuring cup to pour bite-sized [or adult-sized] circles onto skillet
  6. After about 1 minute or when batter can lift cleanly off surface, flip pancakes onto other side
  7. Continue flipping back and forth until both sides are cooked evenly, without burning
  8. Serve and enjoy with your choice of toppings!

Sippin’ on Springtime

In San Diego this weekend our temps are set to break records being in the high 80s. Todays is absolutely STUNNING, and with my garden blooming, the sun shining, and an ocean breeze swaying through the doors, I was compelled to whip up this it’s-five-o-clock-somewhere afternoon cocktail. I’ve never met a combo that screams a summer afternoon with your girlfriends more.

Having spent the past 6 years as an event coordinator, I always am on the lookout for versatile recipes, especially when it comes to drinks. Not only is this the perfect backyard BBQ cocktail, it’s also perfect for a bridal shower, baby shower [if it’s a girl, use Simply Lemonade’s Raspberry Lemonade for a pop of color!] , or other event.

My best friend, Courtney, is coming to visit this weekend, so I cleaned my house, did laundry, cleaned my car, went grocery shopping, stocked the fridge, and, of course, made sure to pick up an extra bottle of my favorite champs to have on hand 😉 Staring at two bottles in the fridge, I had to pop one to test out in the Sea Shells & Sit Ups kitchen this afternoon. If it’s socially acceptable for men to always have a beer with lunch, then it’s totally okay for women everywhere to enjoy this on their porch swings, lying by the pool, or lounging in the backyard. Cheers to you beauties everywhere! TGIF!

Ingredients:

*If just making one class, mix about 1 cup lemonade to 1/4 cup champs

TIP: Try freezing your berries so they act as ice cubes!

DOUBLE TIP: Have somewhere to be and can’t commit to finishing the whole bottle of champs? Have no fear, mama……my sister & a TIU sister shared this amazing tip that I’ve been utilizing ever since – After popping your bottle of champs, add a metal spoon upside down and insert into the bottleneck. I’M SERIOUSLY NOT KIDDING WHEN I TELL YOU THIS KEPT MY LEFTOVER CHAMPS STILL BUBBLY FOR A WEEK! A WEEK! YES!!! SERIOUSLY!!

Jackson Hole Chicken

My mom, sister and I named this recipe “Jackson Hole Chicken,” because it reminds us of our favorite vacation spot, and has been adapted from Rebecca Wood’s original recipe in Jackson Hole Cooks! (which is one of my favorite cookbooks).

JACKSON HOLE CHICKEN

Ingredients:

  • 1 package organic, boneless chicken cutlets (or chicken breast cut into cutlets)
  • 1 cup Italian Herb Panko or plain panko
  • 1/4 cup coconut oil, melted (or butter or avocado oil)
  • 1/2-1 cup shredded four-cheese Italian blend or shredded or shaved Parmesan cheese [or leave out if dairy free]
  • 3 tablespoons dry white wine or dry champagne
  • 2/3 cup dijon mustard
  • Sprayable coconut oil

Directions:

  1. Preheat oven to 450 F degrees
  2. While oven is preheating, combine mustard & wine in a small bowl
  3. Combine parmesan cheese, panko, and melted coconut oil in a second bowl
  4. Spray a baking sheet or pan with coconut oil or line pan with foil, then spray coconut oil
  5. Dip each cutlet in the mustard batter, then coat with the panko mix
  6. Place each cutlet on baking dish
  7. Place dish in oven and bake for about 20-30 minutes, or until chicken is cooked all the way through. Cooking time will vary depending on size of chicken and oven.
  8. Let cool, serve, and enjoy!

*TIP to complete the dish – I LOVE making this with grilled asparagus and Jackson Hole Cooks! Golden Parmesan Potatoes. Potatoes are a great source of potassium and not something you should ever feel bad about eating. Let’s vote for more carbs in 2020…
